4 ounces dry penne pasta
½ cup butter
1 small sweet onion, peeled and diced
3 cloves garlic, minced
1 red bell pepper, sliced
1 lemon, juiced
freshly ground pepper, to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet melt your butter over medium heat. Immediately add your onions then garlic; stirring constantly. Add the red bell pepper. Increase heat to medium high and pour in 1/2 of your lemon juice. Sprinkle with black pepper. Lightly tossing while cooking, add other half of the lemon juice and toss just to coat. Your butter should be getting lightly browned but not burned and be careful not to over brown your garlic. When vegetables are crisp-tender remove from heat. Toss with pasta and serve with freshly grated Parmesan cheese.

This recipe appeared in our local paper. It seems a little different from the usual pasta salads. You can also add 3 or 4 grilled chopped chicken breasts to the salad for a main dish.

1 (16 ounce) box bow tie pasta
2 tomatoes, chopped into large chunks
1 lb green beans, trimmed and snapped into pieces
1 (1 ounce) package hidden valley ranch dressing mix
3 tablespoons sunflower seeds, roasted and salted
parsley or other fresh herb, minced
olive oil

Steps:

  • Cook bowtie pasta in a large pot of boiling, salted water according to package directions. The last 3 to 5 minutes of cooking time, add the green beans. Drain in colander.
