An excellent soup with no cholesterol and very low in fat. This recipe makes a lot so you can cut it in half or try freezing. This soup freezes so well you can not tell the difference between fresh or frozen

12 cups water
2 large potatoes, peeled and quartered
1 (14.5 ounce) can whole peeled tomatoes, mashed
¼ cup pearl barley
¼ cup uncooked white rice
2 tablespoons margarine
¼ teaspoon salt
¼ teaspoon ground black pepper
1 large carrot, diced
1 onion, chopped
1 large stalk celery, with leaves, finely chopped
½ cup fresh green beans, cut into 1/2 inch pieces
1 large potato, peeled and diced
½ cup frozen petite peas, thawed
½ cup broccoli florets
¼ cup barley flakes

Steps:

  • In a large stock pot, add water and 2 large potatoes, peeled and quartered. Bring to boil, then add mashed tomatoes. Cook for 10 minutes, add barley and rice and cook until potatoes are tender.
  • Remove potatoes and mash together with margarine, set aside.
  • Add salt, pepper, carrots and beans and cook for 10 minutes or until carrots are tender.
  • Add onions, cubed potatoes, celery, peas and broccoli and cook for 5 minutes.
  • Add the mashed potatoes and stir. Add barley flakes and cook for an additional 5 minutes and serve.

Kosher salt
8 ounces lasagna noodles, broken into pieces (about 10 noodles)
1 tablespoon extra-virgin olive oil, plus more for drizzling
1 onion, chopped
1/2 pound hot or sweet Italian sausage, casings removed
3 cloves garlic, chopped
1 teaspoon dried oregano
2 tablespoons tomato paste
4 cups low-sodium chicken broth
1 15-ounce can crushed or diced tomatoes
1/2 cup chopped fresh basil, plus thinly sliced leaves for topping
1/3 cup grated parmesan cheese (plus more for sprinkling, optional)
1/4 cup heavy cream or half-and-half
Ricotta cheese, for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs. Drain; drizzle with olive oil and toss.
  • Meanwhile, heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the onion and cook, stirring, until softened, about 4 minutes. Add the sausage, garlic and oregano and cook, stirring and breaking up the sausage with a wooden spoon, until the sausage is browned, about 3 minutes. Add the tomato paste and cook, stirring, until darkened, about 2 minutes.
  • Add the chicken broth, tomatoes and 1 cup water; cover and bring to a simmer. Uncover and cook until slightly reduced, about 10 minutes. Stir in the noodles, basil, parmesan and heavy cream; simmer 2 more minutes.
  • Divide the soup among bowls. Top with ricotta and sliced basil.

1 pound lean ground beef (90% lean)
1 large green pepper, chopped
1 medium onion, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cans (14-1/2 ounces each) reduced-sodium beef broth
1 can (8 ounces) tomato sauce
1 cup frozen corn
1/4 cup tomato paste
2 teaspoons Italian seasoning
1/4 teaspoon pepper
2-1/2 cups uncooked spiral pasta
1/2 cup shredded Parmesan cheese

Steps:

  • In a large saucepan, cook beef, green pepper and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking up beef into crumbles. Add garlic; cook 1 minute longer. Drain., Stir in tomatoes, broth, tomato sauce, corn, tomato paste, Italian seasoning and pepper. Bring to a boil. Stir in pasta. Return to a boil. Reduce heat; simmer, covered, 10-12 minutes or until pasta is tender. Sprinkle with cheese.

2 tablespoons olive oil
3 leeks, cleaned light green part and white part, finely chopped
4 carrots, peeled and sliced
4 medium zucchini, sliced
3 medium (about 1 pound) White Rose or other all-purpose potatoes, peeled
and thinly sliced
1 1/2 tablespoons tomato paste
6 cups chicken stock
1 cup cooked, drained and rinsed garbanzo beans
1 tablespoon lemon juice
2 tablespoons finely chopped parsley
Salt and freshly ground white pepper, to taste
1 tablespoon finely chopped parsley, for garnish
1 tablespoon finely chopped lemon zest, for garnish

Steps:

  • Heat the oil in a large saucepan on medium heat. Add the leeks and saute for about 5 minutes, or until softened. Add the carrots, zucchini and potatoes, and saute for about 3 minutes more, or until mixed well and beginning to soften. Add the tomato paste and chicken stock and simmer, partially covered, for about 30 minutes or until the vegetables are tender. Add the garbanzo beans and cook for another 3 minutes or until heated through. Add the salt and pepper. Process the soup with an immersion blender in the soup pot until pureed. Add the parsley and taste for seasoning.

12 uncooked lasagna noodles
1/4 cup olive oil
1 yellow onion, halved and sliced
4 garlic cloves, minced
1 sprig oregano, minced
2 sprigs thyme, minced
1 pound ground beef
1 pound pork sausage, casing removed
1 teaspoon kosher salt
1/2 teaspoon black pepper
3 tablespoons tomato paste
3/4 cup white wine or stock
One 14.5-ounce can whole tomatoes with juice
4 cups (1 quart) vegetable or chicken stock
1 tablespoon chopped parsley, plus more for serving
1/2 cup heavy cream
1 cup whole-milk ricotta cheese
1/2 cup freshly grated Parmesan cheese
1 tablespoon minced parsley
1 tablespoon minced basil, plus some torn leaves for garnish
1/2 teaspoon kosher salt
1/2 teaspoon black pepper

Steps:

  • Bring a pot of water to a boil. Break the lasagna noodles into random smaller pieces.
  • In a large Dutch oven or soup pot, heat the olive oil over medium heat. Add the onion,
  • garlic, oregano, and thyme and cook, stirring, until starting to soften, about 2 minutes.
  • Increase the heat to medium-high, then add the ground beef, sausage, salt, and pepper . . .
  • And saute until the meat is fully cooked, breaking it up as you go, about 5 minutes. Drain
  • off at least half of the grease.
  • Add the tomato paste . . .
  • And stir to combine. Let the tomato paste cook for 1 minute.
  • Add the wine and stir to deglaze the bottom of the pan, scraping up any flavorful little
  • bits.
  • Add the tomatoes and their juice, crushing them with the spoon as you stir them in.
  • Add the stock and stir it in . . .
  • Then add the parsley.
  • Bring to a boil, then reduce the heat to low and simmer for 20 minutes. Taste and adjust
  • the salt and pepper as needed.
  • Cook the noodles about 1 minute less than the package directions, until almost tender. Drain and set aside.
  • Pour in the cream and stir to combine.
  • Add the noodles and let them simmer for 5 minutes while you make the ricotta mixture.
  • Make the ricotta "dumplings:" In a bowl, combine the ricotta, Parmesan, parsley,
  • basil, salt, and pepper . . .
  • And stir until combined.
  • Dish up bowls of soup, sprinkle with a little extra basil, and add a dollop of ricotta (or two or three) to the top of each one!
