SOUP THAT'S "COOL AS A..." WELL YOU KNOW - CUCUMBER!
Having tons of fresh dill and a few extra cucumbers on hand, I decided to search Recipe Zaar for a cold cucumber soup to try. However, I just couldn't find a soup that was quite what I wanted, so I took elements from a few that tickled my fancy and made my own. As always, you can adjust the ingredients to taste, especially the garlic (which can be increased, decreased, or even eliminated) and the dill. I hope you enjoy it... and be sure to leave a comment!

Steps:
- Cut cucumber into small enough sections to be blended, saving one short (approx. 2 1/2 in) section for later.
- Blend cucumber with yogurt buttermilk, lemon juice, garlic, and dill.
- Cube remaining cucumber and stir into blended mixture. This provides texture to the soup. However, if you would prefer an entirely smooth soup, just blend the cucumber chunk with everything else.

Tips:
- Choose the right cucumbers: Look for fresh, firm cucumbers with no blemishes or bruises. English cucumbers are a good choice for gazpacho and other cold soups, as they have fewer seeds and a thinner skin.
- Chill your ingredients: Before making your soup, chill your cucumbers, yogurt, and other ingredients. This will help to keep the soup cold and refreshing.
- Use a high-quality olive oil: Olive oil is a key ingredient in many cucumber soups. Choose a high-quality extra virgin olive oil for the best flavor.
- Garnish your soup: Before serving, garnish your cucumber soup with fresh herbs, such as dill, mint, or cilantro. You can also add a dollop of yogurt or sour cream.
Conclusion:
Cucumber soup is a delicious and refreshing way to enjoy this summer vegetable. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a light and healthy meal, give cucumber soup a try. You won't be disappointed!
