CHERRY MOJITOS
Steps:
- (Do this a couple of hours ahead of time- or longer- so that it has time to chill). > Boil water, add sugar and stir until dissolved. Let cool, then chill in the refrigerator until it has a chance to get very cold.
- In a blender or food processor, blend the chilled simple syrup and cherries. Pour through a strainer, discard the cherry pulp and keep the sweetened cherry juice.
- Place 4 to 5 mint leaves in the bottom of 4 to 6 tall glasses. Squeeze half a lime into each glass. Add 2 ounces of rum to each glass. Use a muddler (or the handle of a wooden spoon) to smash the mint leaves, lime juice and rum together. Divide the sweetened cherry juice between the four glasses. Top each drink off with chilled club soda. Stir, garnish with fresh cherries and serve. Add an ice cube or two, if desired.

- Lime Simple Syrup
- In a small saucepan, combine the sugar, water, and lime zest over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using.
- Yield: 1 2/3 cups
Tips:
- Use fresh sour cherries. Fresh sour cherries have a more intense flavor than frozen or canned cherries. If you can't find fresh sour cherries, you can use frozen or canned cherries, but be sure to thaw them completely before using.
- Make the sour cherry simple syrup ahead of time. The sour cherry simple syrup can be made up to 2 weeks ahead of time and stored in the refrigerator. This will save you time when you're ready to make the mojitos.
- Use a good quality rum. The rum is the main ingredient in a mojito, so it's important to use a good quality rum. Look for a light or white rum that is aged for at least 2 years.
- Don't over-muddle the mint. Muddling the mint releases its flavor, but if you over-muddle it, it can make the mojito bitter. Gently muddle the mint just until it is fragrant.
- Serve the mojitos immediately. Mojitos are best when they are served immediately. The ice will melt and dilute the mojito if it sits for too long.
Conclusion:
Sour cherry mojitos are a refreshing and delicious cocktail that is perfect for any occasion. They are easy to make and can be tailored to your own taste. If you love sour cherries, then you will love this mojito recipe.
