SOUR CREAM BANANA BARS
Steps:
- Spread in greased 15 1/2 by 10 1/2 in pan Bake at 375 degrees for 20-25 minutes until light brown. Cool first, then frost. Icing: Heat 1/4 c. butter over medium heat until delicate brown. Mix in 2 c. powdered sugar, 1 t. vanilla and about 2-3 T. milk until spreadable. Cut into 2 1/2 inch squares.

- Preheat oven to 350-degrees.
- Prepare jelly roll pan with non-stick spray.
- In a separate bowl, combine Flour, Baking Soda, and Salt. Set aside.
- Mix Sugar, Eggs, Sour Cream and Butter in mixing bowl on low speed for 1 minute, occasionally scraping bowl.
- Mix in broken Bananas and Vanilla on low speed about 1 minute.
- Add flour mixture a spoonful at a time, mixing in between.
- Stir in 1/2 cup chopped Walnuts (optional).
- Spread cake batter in jelly roll pan.
- Bake 20-25 minutes at 350-degrees or until lightly browned.
- Let cool.
- Frost with canned Cream Cheese Frosting (or simple powdered sugar glaze).

Steps:
- 1. Heat oven to 375 & grease and flour jelly roll pan (15x10). Mix sugar, sour cream, butter and eggs in large mixer bowl on low speed, scraping bowl occasionally, 1 minute
- 2. Beat in bananas and vanilla on lo speed 30 seconds. Then beat in flour, salt, and baking soda on med. speed, scraping bowl occasionally for 1 minute. Stir in nuts and spread in pan
- 3. Bake until light brown, 20-25 minutes. Cool. Frost with Browned Butter frosting (see recipe below) and cut into bars
- 4. Browned butter frosting: Heat 1/4 c butter over medium heat until delicate brown; remove from heat and mix in 2 c. powdered sugar. Beat in 1 tsp vanilla and 3 tbsp. milk until smooth and of spreading consistency
Tips:
- Use ripe bananas. The riper the bananas, the sweeter and more flavorful your bars will be.
- Don't overmix the batter. Overmixing will make the bars tough.
- Bake the bars until a toothpick inserted into the center comes out clean. If the toothpick comes out with wet batter, the bars need to bake longer.
- Let the bars cool completely before frosting them. This will help the frosting set properly.
- Store the bars in an airtight container at room temperature for up to 3 days. You can also freeze the bars for up to 2 months.
