SOUTH AFRICAN CHOCOLATE CRUNCHIES

They are crunchy squares with a yummy chocolate topping. They are easy to make and popular with kids to make and eat. Once made they won't stay around for long. There is a version of these that does not use chocolate but they are not as popular. I have reduced the sugar to 1/2 a cup, if you would like them sweeter use 1 cup of sugar.

This is a popular after school or lunch bag treat for all South African kids. Most South African baking is done using self-rising flour - and I highly recommend using it! The kind we get here in Canada is Brodie's.

Yield 24 cookies

Number Of Ingredients 7

2 sticks of butter
2 Tbs honey
1 1/2 cups brown sugar
1 1/2 cups flour
1 1/2 cups shredded coconut
4 cups rolled oatmeal
1 tsp baking soda

Steps:

  • In the microwave, melt butter. When melted, stir in honey and set aside. Thoroughly mix together brown sugar, flour and shredded coconut. Then add oatmeal. Stir baking soda into butter mixture, mix well and then add to dry ingredients. Mix well until mixture crumbly. Spray a baking sheet (one with sides about 16 x 11) with cooking spray. Press the mixture into the baking sheet. Bake for 20 minutes at 320 degrees. Remove from oven and gently "cut" the crunchies into squares. Return the pan to oven for a further 15 minutes. Remove from oven and allow to cool completely before breaking apart crunchies.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better the crunchies will taste. This is especially important for the butter and cream, which should be cold when you start baking.
  • Don't overmix the dough: Overmixing the dough will make the crunchies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough will help it to hold its shape and prevent it from spreading too much in the oven.
  • Bake the crunchies at a high temperature: This will help them to rise quickly and get a crispy exterior.
  • Watch the crunchies carefully while they are baking: They can burn easily, so it's important to keep an eye on them.

Conclusion:

South African crunchies are a delicious and easy-to-make treat that can be enjoyed by people of all ages. They are perfect for parties, bake sales, or as a homemade gift. With a few simple tips, you can make sure that your crunchies turn out perfectly every time.
