- In a small bowl, combine bread crumbs with milk. Set aside. Grease a 9x5 loaf pan and place the 2 bread heels in the bottom. In a large mixing bowl, combine ground beef, onion, taco seasoning, and bread crumb milk mixture. Mix until well combined.
- Spread 1/2 of meatloaf mixture in loaf pan on top of bread heels. Sprinkle 1 cup shredded cheese over meat, layer on top of cheese the sliced olives, tomatoes and green onions. Sprinkle on the other 1 cup of cheese over that. Spread rest of meatloaf mixture on top. Spoon the salsa on top.
- Bake at 350 for 1 hour or until done. Let meatloaf rest 5-10 minutes covered after taking out of oven.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
- Mix beef, onion, 1 cup ketchup, bread crumbs, eggs, salt, and pepper together in a bowl. Press beef mixture into a loaf in the prepared loaf pan.
- Mix 1 1/2 cups ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce together in a saucepan; cook and stir over medium heat until sauce is smooth and warm, about 10 minutes. Pour 1/3 the sauce over meatloaf.
