1/4 cup lemon juice
1 can (14 ounces) sweetened condensed milk
1/3 cup milk
1/2 cup sweetened shredded coconut
1/8 teaspoon ground cardamom
6 very firm bananas, halved lengthwise
3 cups cornflakes crumbs
5 to 6 pounds chicken pieces
3/4 cup butter, melted, divided
Sliced kiwifruit and starfruit, optional

Steps:

  • In a food processor or blender, blend the lemon juice, condensed milk, milk, coconut and cardamom until smooth. Pour into a bowl. Dip bananas into milk mixture; roll in cornflakes and set aside. , Dip chicken into remaining milk mixture; roll in remaining cornflakes and place in two greased 13-in. x 9-in. baking pans. Drizzle with 1/2 cup of the melted butter. Bake, uncovered, at 350° for 1 hour. , Arrange bananas over the chicken. Drizzle with remaining butter. ½ cup flaked coconut
⅛ teaspoon ground cardamom
6 very firm bananas, halved lengthwise
3 cups cornflakes cereal
6 pounds skinless, boneless chicken breast halves
¾ cup butter, melted
1 kiwi, peeled and sliced for garnish

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a food processor or blender blend the lemon juice, condensed milk, milk, coconut and cardamom until smooth. Pour into a large bowl. Put cornflakes in a shallow dish for rolling.
  • Dip bananas in milk mixture, roll in cornflakes and set aside. Dip chicken pieces in remaining milk mixture and roll in the remaining cornflakes. Place the bananas in one 9 x 13 inch dish. 6 lbs chicken, cut up into serving portions (2 chickens)
salt and pepper, to taste
1 cup cream of coconut or 1 cup coconut milk
2 tablespoons lemon juice
6 medium bananas, peeled and cut in half crosswise (two thick pieces, not flat)
2 1/2 cups corn flake crumbs
3/4 cup melted butter or 3/4 cup margarine

Steps:

  • Season all sides of the chicken pieces with salt and pepper.
  • Mix the coconut milk with the lemon juice.
  • Dip each banana piece in the liquid and roll in the cornflake crumbs (pressly firmly to help adhere).
