Crumbled crackers often top this casserole, but we prefer homemade breadcrumbs because they soak up more butter.

5 tablespoons salted butter, divided
¼ cup chopped yellow onion

MOM'S OYSTER CASSEROLE

Mom's Oyster Casserole image

My mother has made this casserole every thanksgiving for as long as I can remember. It just wouldn't be the holidays without it. If my brother can't make it home for the holidays, it is one of his special requests when he is able to get home. The prep time is me using a food processor to chop and doesn't include the time to cut oysters in half if they are too large. I hope you enjoy it as much as my family does.

Tips:

  • To ensure the freshest and most flavorful oysters, purchase them live and shuck them yourself just before cooking. If using pre-shucked oysters, make sure they are plump and have a briny, oceanic aroma.
  • Use a variety of vegetables in your casserole to add flavor and texture. Good options include celery, onion, bell pepper, and garlic.
  • Don't overcook the oysters, as they will become tough. Cook them just until they are opaque and tender, about 5-7 minutes.
  • Use a flavorful cheese that will melt well, such as cheddar, Parmesan, or Gruyère. You can also use a combination of cheeses.
  • Serve the casserole immediately, while it is still hot and bubbly.

Conclusion:

Southern oyster casserole is a classic dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like it cheesy, creamy, or spicy, there is a recipe out there for you. So, next time you are looking for a delicious and satisfying meal, give southern oyster casserole a try.
