This recipe was given to me by a friend who is the best pie maker I know. When Bing cherries aren't in season I use raspberries.

1 (15 ounce) package pastry for a double crust 9-inch pie
3 cups peeled, sliced peaches
1 cup Bing cherries, pitted and halved
1 cup blueberries
1 tablespoon lemon juice
½ cup white sugar
¼ cup brown sugar
3 tablespoons all-purpose flour
¼ teaspoon ground cinnamon
⅛ teaspoon salt
1 tablespoon milk, or as needed
1 teaspoon white sugar, or as needed

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Press one pie crust pastry into a 9-inch pie plate. Cut the remaining pie crust pastry into 3/4-inch strips to be used for the lattice top.
  • Mix peaches, cherries, blueberries, and lemon juice together in a large bowl. Add 1/2 cup white sugar, brown sugar, flour, cinnamon, and salt; stir to coat. Pour fruit mixture into the prepared pie crust. Weave a lattice top over the fruit filling using the pie crust strips. Brush top crust with milk; sprinkle with about 1 teaspoon white sugar.
  • Bake in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C); bake until fruit filling is bubbling and lattice top is lightly browned, 45 to 50 minutes.

10 1/3 cups pitted sour cherries
1 1/3 cups granulated sugar, plus more for sprinkling
5 tablespoons plus 1 teaspoon tapioca
1/2 cup melted unsalted butter
2 tablespoons plus 2 teaspoons lemon juice
1 teaspoon pure almond extract
1/8 teaspoon salt
4 homemade or store-bought rounds of pie dough

Steps:

  • In a large bowl, mix together the cherries, sugar, tapioca, butter, lemon juice, almond extract and salt. Transfer 2 rounds of pie dough to two 9-inch pie tins. Divide the cherry mixture between the crusts. Cover the pies with the remaining 2 rounds of dough (in a lattice pattern, if desired). Sprinkle the pie crusts with water, and then with some sugar. Chill the pies in the refrigerator at least 30 minutes before baking.
  • Preheat the oven to 475 degrees F.
  • Place the pies on baking sheets and transfer to the oven. Bake about 5 minutes. Reduce the oven temperature to 375 degrees F and continue baking until the filling bubbles and the crust is golden brown, about 45 minutes. Cool the pies on wire rack at least 2 hours before slicing. Store at room temperature up to 2 days.

1 cup sugar
1/4 cup cornstarch
1 teaspoon apple pie spice
5 cups peaches, peeled and sliced

Steps:

  • Preheat oven to 400°F Prepare pie crust as directed on package for two-crust pie, using a 9-inch pie plate.
  • Mix sugar, cornstarch and apple pie spice in large bowl. Add peaches; toss gently. Spoon mixture into pastry-lined pie plate. Top with second pie crust. Seal and flute edge. Cute small slits in top crust.
  • Bake 50-60 minutes or until crust is golden brown and filling is bubbly. Cool on wire rack.
  • After 15-20 minutes of baking , cover edge of crust with strips of foil to prevent excessive browning.

1 pastry for a 9 inch double crust pie
1 egg white, lightly beaten
3 fresh peaches - peeled, pitted, and sliced
1 pint fresh strawberries, hulled and large berries cut in half
1 pint fresh blueberries
2 (6 ounce) containers fresh raspberries
⅓ cup all-purpose flour
3 tablespoons cornstarch
½ cup brown sugar
½ cup white sugar
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
2 tablespoons butter, cut into small pieces
1 teaspoon ground cinnamon
1 tablespoon white sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a 9 inch pie plate with half of the dough and brush with half of the beaten egg white.
