SOUTHWEST BLACK BEAN, CORN AND RICE SALAD

Southwest Black Bean, Corn and Rice Salad image

So many great things about this dish - it's an easy mix some stuff together kind of recipe, it's vegan and healthy, it's delicious, and it doesn't really require cooking if you get the kind of rice you can just microwave. Oh and it's versatile too. You can switch up the grains (I used a combination or brown rice and barley), add avocado if you like, use it as a side or a main dish, in tacos or burritos, whatever you want. The recipe makes 2-3 side dish servings but it can easily be doubled for a 4-5 person dinner or for a party.

Tips:

  • Choose the right type of rice: Long-grain rice, such as basmati or jasmine, is best for this salad as it won't clump together.
  • Cook the rice ahead of time: This will save you time and allow the rice to cool completely before adding it to the salad.
  • Use fresh, sweet corn: If you can't find fresh corn, you can use frozen or canned corn, but be sure to drain it well before adding it to the salad.
  • Add some protein: If you want to make this salad a more complete meal, you can add some grilled chicken, shrimp, or tofu.
  • Make the dressing ahead of time: The dressing can be made up to 2 days in advance and stored in the refrigerator. Just be sure to shake it well before using.

Conclusion:

This Southwest rice and corn salad is a refreshing and flavorful side dish that is perfect for summer cookouts and potlucks. It's also a great way to use up leftover rice and corn. The zesty lemon dressing adds a bright and tangy flavor to the salad, and the cilantro and jalapeño add a touch of spice. This salad is sure to be a hit with everyone who tries it!
