2 cans black beans, rinsed and drained
1 can whole kernel corn, drained
1 green pepper, chopped
1 fresh tomato, chopped
1 onion, chopped (I like a purple onion)
monterey jack cheese, cubed (optional)
1/4 cup fresh lime juice
1/4 cup olive oil
3 tablespoons chopped cilantro
1 fresh jalapeno, chopped
1 clove garlic, minced
1/2 teaspoon chili powder (prefrences New Mexico)
1/2 teaspoon ground cumin

Steps:

  • Combine all ingredients, except the tomato, add dressing, and chill several hours or overnight.
  • Add tomato just before serving.
  • Dressing: Mix dressing ingredients in a jar.
  • Shake to mix, or whisk very, very well.

3 romaine lettuce hearts, shredded
1/2 cup red onion, diced
4 roma tomatoes, chopped
1 (15 ounce) can black beans, rinsed and drained
2 cups four-cheese Mexican blend cheese
1 (15 ounce) can whole kernel corn, drained
3 cups tortilla chips, broken and simply crushed between your hands
1/3 cup fresh cilantro leaves
1/2 cup fresh lime juice, usually about 4 limes
1/2 cup canola oil
1/2 cup sour cream
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Prepare dressing first by combining in food processor or blender fresh cilantro, lime juice, sour cream, sugar, salt and pepper.
  • Then slowly drizzle in oil until fully combined.
  • Pour dressing into container and chill in fridge for several hours for flavors to meld.
  • In large glass/acrylic bowl layer lettuce, then tomatoes, onion, black bean, cheese, and corn.
  • (At this point the salad can wait for up to 8 hours before serving if you wish to be a step ahead later on.).

15 oz. can black beans
1 orange bell pepper
10 oz. cherry/grape tomatoes (about 1 pint)
2 cups sweet corn, cooked
5 green onions
1 cup loosely packed cilantro (stems removed and roughly chopped)
1/2 avocado (or 1/2 cup plain vegan yogurt)
2 Tbsp. fresh lime juice (about 1 lime, more to taste)
1-2 garlic cloves
3 Tbsp. olive oil (for oil-free, sub a little water to thin)
1 1/2 tsp. white wine vinegar
1/8 tsp. salt
Recommended: agave & cumin to taste

Steps:

Your favorite lettuce blend or romaine lettuce
10 grape tomatoes
2 green onions, finely sliced
1/2 Red Pepper, diced (or use baby bell peppers)
1/2 Orange Pepper, diced (or use baby bell peppers)
1/2 cup black beans
1/2 cup corn, frozen, canned or fresh - your choice
1 avocado, diced
1/4 cup of your favorite Mexican blend cheese
DRESSING:
1/2 cup chopped cilantro
1/4 cup vegetable oil
1-2 Tablespoons fresh lime juice
1 Tablespoon apple cider vinegar
Salt & Pepper to taste
1 clove of garlic, minced - or use 1 teaspoon of garlic paste
