Number Of Ingredients 15

1 cup Old El Paso™ Thick 'n Chunky medium salsa (from 16-oz jar)
5 large red bell peppers
2 tablespoons olive oil
1/2 cup chopped onion
1 medium poblano chile, seeded and chopped
1 serrano chile, seeded and chopped
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
3/4 cup Progresso™ chicken broth (from 32-oz carton)
1/4 teaspoon salt
3/4 cup uncooked instant white rice
1 1/4 cups shredded cooked chicken
1 1/4 cups shredded Cheddar cheese (5 oz)
1/2 cup crushed tortilla chips
Sour cream, if desired

Steps:

  • Heat oven to 400°F. Spray 8-inch square (2-quart) baking dish with cooking spray; spread salsa in baking dish.
  • Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes; rinse peppers. If necessary, cut thin slice from bottom of each pepper so they stand up straight.

4 oz can chopped mild green chiles
1 c frozen or canned southwest or mexican corn
10 oz can mild enchilada sauce
2 c shredded cheddar cheese
4 medium green bell peppers

Steps:

  • 1. Preheat oven to 375 degrees. Spray a 9x13 inch glass baking pan with nonstick cooking spray; set aside.
  • 2. Combine ground beef with onion, egg, salt, pepper, cumin, green chiles, corn, ¼ cup of enchilada sauce and ½ cup of the cheese. Mix well.

  • 4. Remove foil and top with remaining cheese; bake an additional 5-10 minutes, or until cheese is melted. Serve warm with toppings, if desired.

Tips:

  • Choose the right peppers: Look for bell peppers that are firm and brightly colored. Avoid peppers that are bruised or have blemishes.
  • Prepare the peppers properly: Cut the tops off the peppers and remove the seeds and ribs. Rinse the peppers thoroughly and pat them dry.
  • Cook the filling thoroughly: Make sure that the filling is cooked all the way through before stuffing the peppers. This will help to prevent foodborne illness.
  • Stuff the peppers tightly: Pack the filling tightly into the peppers so that they are completely full. This will help to prevent the peppers from falling apart during cooking.
  • Bake the peppers at a high temperature: Bake the peppers at a high temperature (400 degrees Fahrenheit or higher) so that they cook quickly and evenly.
  • Serve the peppers immediately: Stuffed peppers are best served immediately after they are cooked. This will help to prevent the peppers from becoming soggy.

Conclusion:

Stuffed peppers are a delicious and versatile dish that can be made with a variety of fillings. They are perfect for a weeknight meal or a special occasion. With a little planning and preparation, you can easily make stuffed peppers that your family and friends will love.
