1 can (11 oz) whole kernel corn with red and green peppers, drained
1 can (15 oz) Progresso™ black beans, drained, rinsed

Steps:

  • In large bowl, mix potatoes, eggs, cheese, Bisquick mix and garlic salt.
  • In 12-inch skillet, heat 2 tablespoons of the oil over medium heat. For each patty, spoon about 1/2 cup potato mixture into oil in skillet. Flatten with the back of spatula.

With all the classic flavors of a burrito - black beans, jalapeños, corn, cheese and cilantro - it would also make great filling for a corn or flour tortilla, with potatoes added in place of rice. Exercise patience when you cook the potatoes. The key to this recipe is leaving them alone once you've put them in the pan, neither stirring nor shaking, for at least 10 minutes, so they develop a nice crust.

5 tablespoons olive oil, or more as needed
2 tablespoons minced fresh jalapeño, or to taste
1 to 1 1/2 cups corn kernels, fresh or frozen

2 garlic cloves, minced
3 1/2 lbs yukon gold potatoes, peeled, cut into 1/8- inch slices

3/4 cup cilantro, coarsely chopped, fresh (plus extra for garnish)
2 cups chicken broth (preferably homemade or at least low sodium)
2 cups whipping cream
1 1/2 cups monterey jack cheese, shredded (about 6 ounces)
1/2 cup queso anejo, crumbled (or Romano cheese)
