These aren't traditional egg rolls! Small flour tortillas are stuffed with an exciting blend of Southwestern-style ingredients, then deep fried until golden brown.

2 tablespoons vegetable oil
1 skinless, boneless chicken breast half
2 tablespoons minced green onion
2 tablespoons minced red bell pepper
⅓ cup frozen corn kernels
¼ cup black beans, rinsed and drained
2 tablespoons frozen chopped spinach, thawed and drained
2 tablespoons diced jalapeno peppers
½ tablespoon minced fresh parsley
½ teaspoon ground cumin
½ teaspoon chili powder
⅓ teaspoon salt
1 pinch ground cayenne pepper
¾ cup shredded Monterey Jack cheese
5 (6 inch) flour tortillas
1 quart oil for deep frying

Steps:

  • Rub 1 tablespoon vegetable oil over chicken breast. In a medium saucepan over medium heat, cook chicken approximately 5 minutes per side, until meat is no longer pink and juices run clear. Remove from heat and set aside.
  • Heat remaining 1 tablespoon vegetable oil in a medium saucepan over medium heat. Stir in green onion and red pepper. Cook and stir 5 minutes, until tender.
  • Dice chicken and mix into the pan with onion and red pepper. Mix in corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt and cayenne pepper. Cook and stir 5 minutes, until well blended and tender. Remove from heat and stir in Monterey Jack cheese so that it melts.
  • Wrap tortillas with a clean, lightly moist cloth. Microwave on high approximately 1 minute, or until hot and pliable.
  • Spoon even amounts of the mixture into each tortilla. Fold ends of tortillas, then roll tightly around mixture. Secure with toothpicks. Arrange in a medium dish, cover with plastic, and place in the freezer. Freeze at least 4 hours.
  • In a large, deep skillet, heat oil for deep frying to 375 degrees F (190 degrees C). Deep fry frozen, stuffed tortillas 10 minutes each, or until dark golden brown. Drain on paper towels before serving.

Nonstick cooking spray
2 1/2 cups shredded Mexican blend cheese
2 cups frozen corn, thawed
One 15-ounce can black beans, rinsed and drained
One 10-ounce package frozen chopped spinach, thawed and squeezed dry
One 4-ounce can diced green chiles, drained
4 scallions, chopped
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 1/2 teaspoons kosher salt
One 16-ounce package egg roll wrappers
1 egg, slightly beaten
5 plum tomatoes, quartered
1 small clove garlic, minced
1/2 jalapeno, seeded and finely chopped
3 scallions, white and light green parts only, finely chopped
1 cup loosely packed cilantro leaves and stems, finely chopped
Juice of 1/2 lime
2 teaspoons kosher salt

Steps:

  • For the egg rolls: Preheat the oven to 425 degrees F. Spray a rimmed baking sheet generously with cooking spray.
  • In a large bowl, combine the cheese, corn, beans, spinach, chiles, scallions, cumin, chili powder, cayenne and salt. Stir together, making sure to break up the clumps of spinach.
  • Have a small bowl of water ready for moistening your fingers.
  • Lay one egg roll wrapper out on a work surface and moisten the edges with your finger. Scoop 1/4 cup of the filling into the center of the wrapper; mound into a 1-inch wide log arranged diagonally across the wrapper, with about an inch of space to the corners. Fold the corners over the filling, gently pressing down on either side to secure the fold. Then, starting at one of the unfolded corners, gently but firmly roll up the egg roll. Place on the prepared baking sheet and repeat until all of the filling has been used.
  • Brush the tops and sides of the egg rolls generously with beaten egg. Bake until golden brown all over, 15 to 20 minutes.
  • For the salsa: Meanwhile, pulse the tomatoes, garlic and jalapeno in a food processor until the tomatoes are almost smooth. Add the scallions, cilantro, lime juice and salt; pulse just to combine.
  • Serve the egg rolls with the salsa on the side, for dipping.

1 can (15 ounces) black beans, rinsed and drained
1 can (11 ounces) Mexicorn, drained

2 tablespoons finely chopped red onion
2 tablespoons finely chopped sweet red pepper
1 jalapeno pepper, seeded and minced

1/3 cup frozen corn, thawed

4 ounces reduced-fat cream cheese
30 wonton wrappers

Steps:

  • In a large skillet, saute the spinach, onion, red pepper and jalapeno in oil until tender. Stir in the corn, beans and seasonings; heat through. Remove from the heat. Stir in shredded cheese and cream cheese until melted., Position a wonton wrapper with one point toward you. (Keep remaining wrappers covered with a damp paper towel until ready to use.) 16 ounces black beans, rinsed and drained
16 ounces corn, drained
2 cups fresh washed and drained spinach
1/4 cup fresh cilantro, chopped
2 garlic cloves, pressed
1/4 cup onion, minced
2 jalapenos, chopped
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
15 prepared fajita whole wheat tortillas
2 cups grated colby or 2 cups monterey jack cheese
7 tablespoons cooking oil
prepared salsa
sour cream

Steps:

  • Combine all ingredients except oil, tortillas, sour cream & salsa, mix well.
  • Put approx 2 tbs of mixture on each tortilla, roll tortilla into a thin taquito.
  • Heat frying pan to med/high heat (I use an electric range and set it to 7).
  • Using 1 tbs cooking oil per 2-3 taquito's, shallow fry in saute pan.
  • Garnish with salsa and sour cream.

1 medium carrot, julienned
1/4 pound shiitake mushrooms, discard stems, julienned
1 large red bell pepper, julienned
1 large yellow bell pepper, julienned
1 small green cabbage, julienned
Peanut oil, for stir-frying
Salt and pepper
1/4 pound glass noodles, soaked in water for 10 minutes, chopped into smaller strands
1/4 cup mushroom soy sauce
2 tablespoons chili paste
1 tablespoon sesame oil
1 bunch cilantro leaves, chopped
Cooked aromatic mixture, recipe follows
Hot Chinese Mustard Sauce, recipe follows
Spring roll wrappers
1 egg with 1 tablespoon each water and cornstarch, beaten together for egg wash
Peanut oil, for deep-frying
1 (2-inch piece) fresh ginger, peeled
3 large cloves garlic
2 green onions
Pinch red pepper flakes
1/2 cup peanut oil
Pinch salt
Pinch black pepper
Pinch sugar
4 tablespoons Chinese dry mustard
2 tablespoons water
2 tablespoons rice vinegar
4 tablespoons pickled ginger liquid
1 lemon, juiced
Pinch turmeric
1 tablespoon sugar
1 egg yolk*
1 tablespoon chili oil
1 tablespoon sesame oil
1 cup peanut oil

Steps:

  • Prepare the filling. In a wok, stir-fry each vegetable separately in peanut oil. Season with salt and pepper. Drain and transfer to a mixing bowl. Stir in noodles, mushroom soy sauce, chili paste, sesame oil, and cilantro. Season with salt and pepper. Set aside to cool completely. When cool, blend the filling mixture with the aromatic mixture. When ready to form the spring rolls, squeeze out all the excess liquid.
  • Make the spring rolls. Place about 1/2 cup of prepared filling per spring roll wrapper. Roll and seal edges with the egg wash. Repeat the process until all filling is used.
  • In a deep pot, with about 4 cups peanut oil heated to 350 degrees F., deep-fry in batches of 4 until golden, about 2 to 3 minutes. Drain on paper towels. Trim off the ends and slice diagonally. Drizzle top with Hot Chinese Mustard Sauce. Serve immediately.
  • Prepare the aromatic mixture. In a food processor, combine the ginger, garlic, green onions and red pepper flakes. Turn on machine, slowly add oil and process mixture to a puree. Saute mixture for 1 to 2 minutes. Season with salt, pepper and sugar. Set aside.
  • Prepare the Hot Chinese Mustard Sauce. In a bowl, combine all the ingredients except the oil. Stir until well blended. Slowly whisk in the peanut oil until emulsified. Refrigerate, covered until needed.

Steps:

  • Preheat oven to 425 degrees F. Line a large baking pan with Reynolds Wrap® Heavy Duty Aluminum Foil. Grease or spray foil to prevent sticking.
  • Combine cilantro, sour cream, jalapeno, mayonnaise, garlic and lime juice in the bowl of a food processor; season with salt and pepper to taste. Set aside.
  • Mash avocados using a potato masher. Add black beans, corn, tomato, lime juice, chili powder, cumin and salt and pepper and gently toss to combine.
  • Place avocado mixture in the center of each wrapper. Bring the bottom edge of the wrapper tightly over the filling, folding in the sides. Continue rolling until the top of the wrapper is reached. Using your finger, rub the edges of the wrapper with water, pressing to seal. Repeat with remaining wrappers and avocado mixture.
  • Place egg rolls on the prepared baking dish. Lightly coat with nonstick spray.
  • Place into oven and bake until golden brown and crisp, about 18 to 20 minutes.
  • Serve immediately with cilantro dipping sauce.

- ground lean turkey
- ground chicken
- frozen corn kernals
- diced onions
- diced tomatoes(drained and rinsed..i use canned)
- black beans(or beans of your choice drained and rinsed)
- spinach(drained and excess water squeezed out)
- 2% cheese shredded(ur favorite flavor)
- garlic powder
- cumin powder
- curry powder(optional)
- imagination!!!
- smart balance oil
- wheat tortilla wraps (size is your preferance)

Steps:

  • Start by prepping your veggies, rinse the tomatoes, beans, and drain the spinach trying to squeeze out excess water from them all.Add a little bit of Smart Balance oil enough to cover the bottom of a pan or pot which ever is your preference. Turn pot on Med-High and add the onions let simmer about 10min then add the rest of your veggies as onions cook slow. Let simmer while you prepare the meat. Just dont forget to stir now and again so as not to burn it.
  • As you see there are no measurements as I really don't measure I just put in the amount i think I want and taste, taste, taste, until its to your likeness.
  • Fry up your ground turkey and chicken in a fry pan...dont add any extra oil it will make its own!! If you choose rinse your meat and dump into a large bowl...makes alot so a big bowl is recommended.
  • Once veggies are tender remove from heat and add veggies to your meat. Add your seasonings and taste, add a little more seasonings, taste. Add your cheese however much you choose and grab spoons and family and taste.(the tasting part goes very well!! lol)
  • Set bowl in the refrigerator to cool. You will now reuse the same fry pan you used to fry the meat. Dont rinse it just wipe out with a paper towel and add your smart balance oil to the pan maybe 1-2 inches deep. Heat oil on med-high heat and watch it. it will sizzle when a few drops of water is added or when your son throws a little toy car into the pan to watch the bubbles and it insanely tries to cook the car!! lol
  • Now reduce your heat for the oil to med and begin assembling your spring rolls. You will need your tortillas and the meat mix from the fridge.
  • place your wrap on a clean counter or work space and add one scoop of meat mix to the wrap towards the edge of the wrap. take the wrap closest to the meat and fold over meat pulling back on the wrap a little to gather the meat mix. no roll over half way again. pinch your sides like folding a present and tuck up side. do the same on the other side then finish rolling. Add 2-3 toothpicks on the flap to keep then closed. Do this with the remaining of the wraps or to however many you wish to do. I usually end up doing 20 wraps. (I got a lot of kids and mostly boys) Go to youtube.com and in search bar put how to wrap an egg roll it will give you a tutorial.
  • Take wraps to your heated oil and plop maybe 2- 3 in at a time. fry until golden brown or to your liking. I like mine almost burnt. remove from oil to drain on a paper towel! Serve with ranch, or sour cream, or guacamole or what ever you like and enjoy!!!!!!! Remember the idea is to have fun, get creative and inventive!!! let me know what u think!!
