RICE-STUFFED PEPPERS
Mother used to fix this wonderful, easy dish when we had company. She was from a family of fantastic Cajun cooks, so our food was always well-seasoned. In Louisiana, rice is part of many meals. The cheese sauce sets these stuffed peppers apart from any others I've tried. -Lisa Easley, Longview, Texas

Steps:
- -Preheat oven to 350 degrees Fahrenheit.
- -Prepare the cup of rice according to packaging. While boiling the water for the rice, add the bouillon cube, it will dissolve into the rice
- -Dice onions in vegetable or olive oil to desired size. Sauté for a couple minutes,
- not too brown. Add garlic.
- -Remove Soyrizo from its casing and saute until brown.
- -Use a knife to core the peppers. Rinse out the seeds and use a spoon to get out the white soft parts on the interior of the pepper.
- -I add half of the rice to the Soyrizo-onion mixture and sauté it for a few minutes once Soyrizo is almost done, then I use the other half of the rice to layer inside of the pepper.
- If you desire, you can mix it all together and just stuff to stuff the peppers.
- -Place on a deep pan and cook in oven for 10-25 minutes, depending on how well you like the pepper cooked. Cooking it longer gives it a browner, seared look.
- Cooking it shorter makes it warm yet crunchy, also still holding its nutrients.

Steps:
- Preheat the oven to 375 degrees F.
- Cut off the top 1/3 inch of each pepper, remove and discard the seeds. If needed, cut a small amount of the bottom off each pepper so that they sit flat. Season the insides evenly with 1/4 teaspoon salt. Nestle the peppers inside an 8-inch baking dish and set aside.
- Heat a large skillet over medium-high heat. Add the oil and heat another minute. Add the plant-based meat and use the back of a wooden spoon to break apart the meat into small pieces. Cook, stirring occasionally, until the meat is browned, about 5 minutes. Add the shallots, fennel, oregano and 1 teaspoon salt and cook another 4 minutes or until fragrant and the vegetables begin to soften. Stir in the rice, tomatoes, spinach, Parmigiano-Reggiano cheese, basil and pepper and cook until the spinach is wilts and the cheese is melted. Divide the mixture among the peppers. Top with the Provolone piccante. Add 1/2 cup of water to the bottom of the pan. Bake the peppers for 40 minutes or until the cheese is melted and peppers are soft but not falling apart. Serve hot.

Steps:
- In a medium saucepan, heat oil and chorizo, cook for 3 minutes.
- Add bell pepper, jalapeno, onions and garlic. Cook until they begin to soften then add rice and cook until all the grains of the rice are coated with oil and the rice begins to take on a little color.
- Add all liquids and stir over high heat for 3 minutes, cover and reduce heat to low.
- Preheat oven to 400 degrees F.
- Place poblano chiles on baking sheet and bake for 15 minutes. Remove from oven and let cool. Once cool, cut top 1/4 of chile off and remove ribs and seeds. Do not remove skin as it will help to hold the pepper together.
- When rice is finished cooking, fluff with fork and stir in shrimp. Stuff chiles with 1/6 of the rice mixture.
- Place all the chiles on baking sheet and place into oven for 10 minutes.
- Remove from oven, mix cheeses together and cover pepper with cheese. Broil for 3 minutes to melt and brown the cheese.
- Serve.
Tips:
- Choose the Right Peppers: Select large, bell-shaped peppers with smooth skin and vibrant color. They should have sturdy walls to hold the stuffing.
- Cook the Rice Perfectly: Cook the rice according to the package instructions or use your favorite method. Make sure it is fluffy and slightly undercooked, as it will continue to cook inside the peppers.
- Prepare the Soyrizo: Follow the recipe instructions or use your preferred method to cook the soyrizo. Ensure it is flavorful and has a slightly spicy kick.
- Customize the Filling: Feel free to add other ingredients to the filling, such as chopped onion, diced tomatoes, or shredded cheese. You can also adjust the seasoning to your taste.
- Stuff the Peppers Carefully: Use a spoon or your hands to gently stuff the cooked rice and soyrizo mixture into the hollowed peppers. Don't overstuff them, as the rice will expand during cooking.
- Bake at the Right Temperature: Bake the stuffed peppers at 375°F (190°C) for 20-25 minutes, or until the peppers are tender and the filling is heated through.
Conclusion:
Soyrizo and rice-stuffed peppers are a delightful vegetarian dish that combines the savory flavors of soyrizo, the fluffy texture of rice, and the vibrant colors of bell peppers.
