Spaghetti coleslaw is a vibrant, refreshing, and satisfying dish that combines the crunchy texture of coleslaw with the tangy flavor of vinaigrette dressing. The base of this salad is made from shredded cabbage, carrots, and onion, similar to traditional coleslaw. However, the unique twist comes from the addition of spaghetti noodles, which add a delightful contrast in texture and a touch of heartiness. This unique combination creates a dish that is both visually appealing and packed with flavor. Spaghetti coleslaw is a perfect side dish for summer gatherings, barbecues, potlucks, and picnics. It can also be enjoyed as a light and healthy meal on its own.

PASTA SLAW

Pasta Slaw image

If pasta salad and coleslaw had a baby, this side salad would be the result. It's truly the best of both worlds. This cool and creamy salad is slightly sweet and tangy and full of texture. Cucumber and bell pepper add a touch of freshness and there's a little bite of onion. Once it sits, the flavors blend very well. A delicious side salad for any summer BBQ.

SALAD
7 ounce(s) Ditalini pasta (salad macaroni, not elbow macaroni)
4 cup(s) cabbage, shredded (about 1 head)
1 medium onion, finely chopped
2 - celery ribs, finely chopped
1 medium cucumber, finely chopped
1 - green bell pepper, finely chopped
1 medium carrot, shredded
DRESSING
1 1/3 cup(s) mayonnaise
1/3 cup(s) sugar
1/4 cup(s) apple cider vinegar
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper

Steps:

  • Cook pasta, drain, rinse, and place in large bowl.
  • Combine remaining salad ingredients and refrigerate.
  • Blend all dressing ingredients.
  • Pour dressing over the top of the salad. Mix thoroughly and refrigerate until ready to eat.

Tips:

  • Choose the right cabbage. Green cabbage is the most common type used in coleslaw, but you can also use red cabbage or a mix of both. Red cabbage will give your coleslaw a beautiful purple color.
  • Shred the cabbage thinly. This will help the dressing to coat the cabbage evenly and make the coleslaw more tender.
  • Use a sharp knife or mandoline to shred the cabbage. This will give you clean, even shreds.
  • Rinse the shredded cabbage with cold water and drain it well. This will help to remove any excess starch and make the coleslaw less watery.
  • Make the dressing ahead of time. This will allow the flavors to meld and develop.
  • Taste the dressing before adding it to the cabbage. You may need to adjust the seasonings to your liking.
  • Toss the cabbage and dressing together gently. Over-mixing will make the coleslaw mushy.
  • Chill the coleslaw for at least 30 minutes before serving. This will help the flavors to develop and the cabbage to soften slightly.
  • Serve the coleslaw with your favorite grilled or fried foods. It's also a great side dish for potlucks and picnics.

Conclusion:

Coleslaw is a classic summer side dish that is easy to make and always a crowd-pleaser. With just a few simple ingredients, you can create a delicious and refreshing coleslaw that is perfect for any occasion.
