3/4 pound spaghettini or spaghetti
1/4 cup extra-virgin olive oil, plus more for drizzling
1/4 cup sliced garlic
1/2 teaspoon finely minced Calabrian chiles, or 1/4 teaspoon red pepper flakes
1 pint small cherry tomatoes, stems removed, crushed between your thumb and forefinger
1/2 cup fresh basil leaves, each torn into 2 or 3 pieces
Gray salt
Freshly ground black pepper
Parmesan, for grating

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and stir.
  • While the pasta cooks, heat 1/4 cup olive oil in a large skillet over medium heat. Kosher salt or coarse sea salt
1 1/2 pounds spaghetti, spaghettoni, tonnarelli or fettuccine
About 2 cups freshly grated Pecorino Romano
1 heaping tablespoon freshly ground black pepper

  • 1. Bring at least 5 quarts of water to a boil in a large pot and add a tiny pinch of salt. Drop in the pasta, stir and cover the pot. When the water returns to a boil, remove the lid and cook, uncovered, until the pasta is al dente. Reserve about 1/2 cup of the cooking water and drain the pasta.

1 large red onion, thinly sliced
2 1/2 teaspoons thyme
1/3 cup extra virgin olive oil, divided
3 cups cherry tomatoes
3/4 cup water

1/2 lb spaghetti
2 1/2 oz very finely grated Pecorino Romano (3/4 cup plus 2 tablespoons) or Parmigiano-Reggiano plus additional for serving

  • Toast peppercorns in a dry small skillet over moderately high heat, swirling skillet, until fragrant and peppercorns begin to jump, 2 to 3 minutes. Coarsely crush peppercorns with a mortar and pestle or wrap in a kitchen towel and press on peppercorns with bottom of a heavy skillet.
  • Cook spaghetti in a 6- to 8-quart pot of boiling salted water until al dente.

salt, to taste
4 tablespoons extra virgin olive oil, plus extra for drizzling (59ml)
3 garlic cloves, peeled and crushed
25 cherry tomatoes, halved
1 bunch fresh basil leaf
pecorino cheese, freshly grated, for sprinkling

  • Place spaghetti in salted boiling water. Stir to prevent from sticking together.
