- 1. Prepare flour onto a counter or use a baking sheet to roll the dough on. 2. Roll out the loaf into a large rectangle, about the thickness of less than an inch. 3. Set the dough at rest by covering it with a plastic wrap for about 12 minutes. 4. Boil spaghetti, drain and let cool. 5. Unwrap dough. 6. Drop the spaghetti in the center into a bundle from one end to the other, length-wise, leaving space on the sides for the folding. 7. Pour the sauce and mozzarella cubes onto the spaghetti. 8. Make even slits on both sides of the dough to create folds or flaps for folding. The flaps should be of the same width and wide enough to hold the filling together without tearing. 9. - Preheat oven to 400 degrees F (200 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer ground beef to a mixing bowl.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain. Transfer spaghetti to bowl with ground beef and mix in spaghetti sauce and Parmesan cheese.
- Unroll pizza dough onto a baking sheet. Starting with a long edge, cut the 2 outer thirds of the crust into 1-inch horizontal strips, leaving the center third uncut. Spoon spaghetti mixture onto the center third from top to bottom. Spread mozzarella cheese over the spaghetti mixture.

- Bring a large pan of water to the boil. Add the spaghetti and cook as per the cooking instructions - usually about 12 minutes.
- Whilst the spaghetti is cooking, rip the garlic baguette into large chunks and pulse in a food processor until you have rough breadcrumbs.
- Heat 1 1/2 tbsp of the olive oil in a large frying pan/skillet and fry the garlic breadcrumbs for 3-4 minutes until golden brown. Make sure you stir regularly to stop the breadcrumbs from burning. Remove from the pan and place on a plate.
- Just before the spaghetti is ready, heat the remaining 1/2 tbsp oil in the large frying pan and add in the chopped chilli. Fry for 1-2 minutes on a low-medium heat.
- Drain the spaghetti, reserving a cupful of the cooking water.
- Place the spaghetti in the frying pan with the chillies along with 4 tbsp of the pasta cooking water.
- Add the zest and juice of the lemon, the 50g (1/2 cup) parmesan, 2 tbsp parsley and a pinch of salt and pepper. Toss to combine. Add a little more cooking water if you want the dish to be a little more creamy.
- Stir through three-quarters of the breadcrumbs, then divide between 4 bowls.
- Top with the rest of the garlic breadcrumbs, plus a sprinkling of parmesan, lemon zest and black pepper.

- Cook the pasta in a large pot of boiling, salted water (1-1/2 tsp), until AL DENTE.
- Drain, reserving 1 cup of the pasta water.
- Gently heat 3 Tbsp. of olive oil in a large, heavy frying pan over medium (do not burn).
- Add the onion and garlic. cooking until fragrant, about a minute or two (do not burn).
- Mix in another 1/2 tsp. salt and the oregano, black pepper, and red chili pepper flakes.
- Remove from the heat and set aside.
- In the same frying pan, add the remaining olive oil and butter and gently heat on medium.
- Add the breadcrumbs and cook until toasted golden brown and fragrant, stirring frequently so they do not burn, about 2 - 3 minutes.
- Turn off the stove burner.
- Mix into the toasted breadcrumbs: the sauteed garlic, onion, oregano, chili pepper, salt and pepper mixture.
- Mix in the parmesan cheese.
- When the pasta is finished cooking, toss the pasta into the frying pan with the breadcrumb mixture gently tossing to coat the pasta evenly.
- Add some reserved pasta water OR olive oil if needed to loosen the pasta, adding about 1/4 cup at a time until your preferred consistency is achieved (I used a whole cup of the reserved pasta water and another 1/4 cup of extra virgin olive oil.
- Transfer to a large pasta platter and garnish with basil leaves and shaved Parmesan cheese.
- Offer basil pesto to guests to add to their pasta if desired.

This recipe calls for a thawed loaf of Rhodes bread dough & it takes 6-8 hours for the bread to thaw at room temp. You can make the bread dough yourself or buy another brand. The dough rolls out much easier when it is warm. Roll it out as much as you can, then cover it and let it rest for 10 or 15 minutes. When you roll it out the 2nd time, it will roll much better. I have changed the recipe to use vegetarian "meat", you can use real meat if you like. And I add veggies to my spaghetti sauce-bell peppers, onions, eggplant, squash, and the list goes on! You can even leave out the spaghetti and just stuff it with veggies! From Bless This Food, who got it from the Rhodes website. - Pre heat oven to 350* F. Lay out a large sheet of parchment paper (Do it. Don't even bother trying to go sans the paper. I'm 99% sure you'll make a mess when trying to transfer) & roll your loaf out into a 12x16 rectangle. Cover with plastic wrap & let it rest while you get everything else ready (10 min or so).
- Cook your spaghetti (or angel hair) according to directions & drain. Mix in the tomato sauce & vegetarian Italian sausage/hamburger (or use real meat-optional) & let it cool slightly while you continue to prepare.
- Cut your block of mozzarella into chunks.
- Melt the butter in a microwave safe dish & stir in the minced garlic & a few pinches of basil. Uncover the dough & using a pastry brush, brush a little more than 1/2 of the butter mixture onto the dough.
- Now spoon the spaghetti lengthwise in a 4-inch strip down the center of the dough- top with the mozzarella chunks.
- Make cuts 1 1/2 inches apart on the long sides of the dough to within 1/2 inch of the filling.
- Start braiding by folding the strips towards the filling- braid left over right, right over left, etc etc- all the way down.
- Finish the ends by pulling the strips over & tucking under the braid.
- Then brush the remainder of the garlic butter all over the top of the bread. Sprinkle with the parmesan cheese, a little more basil & some garlic powder. Add smoked paprika to taste, a pinch or two. Sprinkle parsley over the top.
- Slide the parchment paper to a large baking sheet & bake in your pre heated oven for 30 minutes, until golden brown. Let it rest for about 5 minutes & then slice to serve.
