2 teaspoons sugar
3/4 teaspoon dried parsley flakes

1/4 teaspoon garlic powder
1/4 teaspoon onion powder
12 frozen fully cooked Italian turkey meatballs, thawed and quartered
1 package (13-1/4 ounces) whole grain thin spaghetti
12 taco shells
3/4 cup shredded reduced-fat Italian cheese blend
Thinly sliced fresh basil, optional

1 teaspoon canola oil
1/2 cup frozen corn
1 can (15 ounces) black beans, rinsed and drained
1/2 cup salsa
2 green onions, chopped
1/4 cup chopped fresh cilantro
1/4 cup salted pumpkin seeds or pepitas
2 tablespoons lime juice
1/2 teaspoon garlic salt
1/2 teaspoon ground cumin
1/4 teaspoon salt
20 corn tortillas (6 inches), warmed
Guacamole, optional

Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash on a microwave-safe plate, cut side down. 1 (16 ounce) package angel hair pasta
1 (28 ounce) jar spaghetti sauce
1 (5.8 ounce) package crisp taco shells
¼ cup grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Return the pasta to the pot, and pour the sauce over the pasta; mix thoroughly until reheated. 1 (3 pound) spaghetti squash
2 tablespoons fresh lime juice
1 teaspoon chili powder
½ teaspoon ground coriander
½ teaspoon ground cumin
½ teaspoon coarse salt
1 (15 ounce) can black beans, rinsed and drained
4 ounces queso fresco, crumbled
¼ cup chopped red onion
¼ cup chopped fresh cilantro
16 (6 inch) corn tortillas
¼ cup salsa

  • Make 1-inch deep punctures all over squash with a serrated knife. Microwave squash on high for 6 to 8 minutes; turn over and microwave until squash is steaming and cooked through, another 8 to 10 minutes. 2 teaspoons vegetable oil
1 (1.25 ounce) package dry taco seasoning mix
1 small onion, diced

1/2 lb thin spaghetti noodles
1/2 lb ground beef
2 tablespoons taco seasoning, low sodium
1 (8 ounce) jar taco sauce
1 cup shredded cheese (we used cheddar jack)
1 (16 ounce) jar salsa
12 crunchy taco shells

Steps:

  • Brown the ground beef.
  • Drain and season with the taco seasoning and add the taco sauce to make a sort of spaghetti sauce.
  • While you are cooking the meat cook up the spaghetti noodles.
