1/2 cup olive oil
1 rabbit, cut into 6 to 8 portions
Salt and freshly ground black pepper
15 medium-size mushrooms, quartered or sliced
2 shallots, minced
1/3 cup all-purpose flour

1 cup tomato sauce
1 cup red burgundy wine
1 to 2 cups beef broth

Add the garlic, almonds, cinnamon, red pepper flakes and salt, and cook until the aromas are released, about 1 minute. Add the wine and reduce by half.

Tips:

  • Choose the right rabbit: Select a young, tender rabbit for the best flavor and texture. If possible, choose a rabbit that has been raised on a natural diet, as this will result in a more flavorful stew.
  • Brown the rabbit: Browning the rabbit before stewing it adds depth of flavor and color to the dish. Be sure to brown the rabbit in batches so that it doesn't overcrowd the pan and steam instead of browning.
  • Use a good quality wine: The wine you use in the stew will have a big impact on the final flavor, so choose a wine that you enjoy drinking. A dry white wine or a light red wine are both good choices.
  • Don't overcook the rabbit: Rabbit is a delicate meat, so it's important not to overcook it. Otherwise, it will become tough and chewy. Cook the rabbit until it is just tender, about 1 hour.
  • Serve with crusty bread: Crusty bread is the perfect accompaniment to rabbit stew. It can be used to soak up the delicious sauce and add a bit of texture to the dish.

Spanish rabbit stew is a classic dish that is enjoyed by people all over the world. It is a flavorful and hearty stew that is perfect for a cold winter day.
