SPICY SPANISH RICE

Spicy Spanish Rice image

This is a tasty dish perk up any "ho-hum" dinner. We especially like it with chicken enchiladas. I also prepare it for potlucks and family get-togethers. It's a little different to bake rice, but it's handy to not have to watch it on the stove. You can make the rice less spicy by choosing a more mild variety of the canned tomatoes with green chilies.

SPANISH CHICKEN WITH RICE AND OLIVES

Spanish Chicken With Rice and Olives image

I most always add in some chorizo or smoked dry sausage to this just to boost up the flavor a bit. If you have a large electric fypan, then use it for this recipe. Please include the saffron, it really makes this recipe!

Tips:

  • Use medium-grain rice: Medium-grain rice, such as Valencia or Arborio, is the best choice for Spanish rice. It has a higher starch content than long-grain rice, which helps to create a creamy, slightly sticky texture.
  • Rinse the rice before cooking: Rinsing the rice removes excess starch, which can make the rice gummy. Be sure to rinse the rice until the water runs clear.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute the heat evenly and prevent the rice from burning.
  • Sauté the aromatics before adding the rice: Sautéing the onions, garlic, and bell peppers in olive oil before adding the rice will help to release their flavor and create a more flavorful dish.
  • Use a combination of broth and water: Using a combination of broth and water will add flavor to the rice without making it too salty.
  • Cook the rice over low heat: Cooking the rice over low heat will help to prevent it from burning and will allow the flavors to develop fully.
  • Let the rice rest before serving: Let the rice rest for 5-10 minutes before serving. This will allow the rice to absorb any remaining liquid and will make it easier to fluff.

Conclusion:

Spanish rice with olives is a flavorful and easy-to-make dish that is perfect for a weeknight meal. It is a versatile dish that can be served as a side dish or as a main course. With a few simple tips, you can make a delicious Spanish rice with olives that your family and friends will love.
