SPANISH WHITE RICE

Spanish White Rice image

Spanish white rice is a bit different from the white rice found in Asian dishes... mainly, it is not as sticky. This rice accompanies many Latin American dishes and it is one of the main staple foods (add beans) of the region.

ARROZ BLANCO (MEXICAN WHITE RICE)

Arroz Blanco (Mexican White Rice) image

When most people think of Mexican rice, they think of the typical tomato-flavored rice. When I've been in Mexico, however, I've been served this type of white rice often. This recipe is authentic Mexican and comes from Rick Bayless.

Provided by Velouria

Categories     White Rice

Time 35m

Yield 5 cups, 5-6 serving(s)

Number Of Ingredients 8

2 1/2 cups chicken broth or 2 1/2 cups water
salt
2 tablespoons vegetable oil or 2 tablespoons olive oil
1 1/2 cups white rice, preferably medium-grain
1 small white onion, chopped
2 garlic cloves, peeled and finely chopped
1 tablespoon fresh lime juice
3 tablespoons roughly chopped fresh flat-leaf parsley, for garnish

Steps:

  • In small saucepan or microwave oven, heat broth or water until steaming.
  • Stir in about 3/4 teaspoon salt if using salted broth, 1 1/2 teaspoons if using unsalted broth or water.
  • Cover and keep warm.
  • In medium (3-quart) saucepan with a tight-fitting lid, heat the oil over medium heat.
  • When hot, add raw rice and onion and stir regularly until grains have turned from translucent to milky-white, 4-5 minutes.
  • Add garlic and stir for a few seconds, until fragrant. Do not let grains brown.
  • Add the warm liquid and lime juice, stir thoroughly, scraping down any grains that are clinging to the side of the pan.
  • Cover and cook over the lowest heat for 15 minutes--temperature should be low enough that only the slightest hint of steam escapes lid.
  • Remove pan from heat and let stand covered for 5 minutes.
  • Uncover and test a grain of rice: if still a little hard, re-cover pan and set over low heat for about 5 min.; if rice has absorbed all liquid and is completely dry, sprinkle on 2 tablespoons water before returning to heat.
  • When rice is done, sprinkle on parsley and gently fluff with fork to release steam and stop the cooking.

Categories     easy, side dish

Time 35m

Yield Four to six servings

Number Of Ingredients 5

2 cups white rice
About 2 1/2 tablespoons freshly squeezed lime juice
3 cups water
2 tablespoons olive oil
Salt to taste

Steps:

  • Place the rice in a colander and rinse it thoroughly, adding a few drops of fresh lime juice to the rinsing water (the lime juice helps take away the musty smell that rice gets from sitting in the package).
  • In a saucepan, bring the water, 1 tablespoon of the lime juice, 1 tablespoon of the olive oil and salt to a boil. (To make the con conor delicately flavored crusts of rice, use a very light pan; do not use a pot with an enamel or Teflon surface.)
  • Stir in the rice. Return to a boil, cover tightly and simmer over low heat for 15 to 20 minutes, or until the rice is tender and dry.
  • Turn off the heat and let stand for a few minutes. Gently stir in 1 tablespoon olive oil. The sides and bottom of the pan will be covered with a crust of browned rice, the con con Scrape off the browned bits and serve separately.

MEXICAN WHITE RICE

Mexican White Rice image

This is a dish you'll find on almost every table in Mexico. It goes with so many things, from hearty stews to elegant moles. With the addition of a surprising herb, this recipe gives your typical white rice a "south of the border" feel.

Provided by Rick Bayless

Categories     side-dish

Time 30m

Yield 4 servings

Number Of Ingredients 8

2 1/2 cups chicken stock, or water
kosher salt
2 tablespoons vegetable oil, or olive oil
1 small white onion
1 1/2 cups medium-grain white rice
2 cloves garlic
1 tablespoon lime juice
1/2 bunch flat-leaf parsley

Steps:

  • In a medium saucepan, heat the broth or water until steaming. Season with ¾ teaspoon salt if using salted broth, 1½ teaspoons if using unsalted broth or water. Cover and keep warm on the stove.
  • In another medium saucepan, heat the oil over medium heat. Dice the onion and add to the pan. (Note: Chef Bayless uses half a large onion, but this recipe substitutes one small onion.) Add the rice and stir constantly until the grains have turned from translucent to milky-white, about 3 to 4 minutes. Chop the garlic, add to the saucepan, and cook until fragrant. Add the warm broth and lime juice; scrape down any grains that are clinging to the side of the pan. Cover, reduce the heat and simmer until the rice is cooked, about 15 minutes.
  • Remove the pan from the heat and let stand, covered, for 5 minutes. Meanwhile, chop parsley; set aside 3 tablespoons. Gently fluff the rice to release the steam and stop the cooking. Fold in the parsley. Transfer to a bowl and serve immediately.

SPANISH RICE

Spanish Rice image

One cook's "Spanish" rice is another's "Mexican." Whatever the name, the result is more or less the same: an orange pilaf-style rice flavored with onion and garlic and flecked with carrot. Tomato paste further tints this colorful companion to all things Tex-Mex.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains     Rice Recipes

Number Of Ingredients 9

2 teaspoons vegetable oil
1/2 medium white onion, chopped (1 cup)
1 garlic clove, minced
1 medium carrot, diced (1/4 cup)
1 cup long-grain rice
1 3/4 cups homemade or store-bought low-sodium chicken stock or water
1 tablespoon tomato paste
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Heat oil in a heavy 4-quart pot over medium-high heat. Add onion, and cook until just starting to turn translucent, about 3 minutes. Add garlic and carrot, and cook until fragrant, about 2 minutes. Stir in rice to coat. Add chicken stock or water, tomato paste, salt, and pepper. Bring to a boil, stir once, and reduce heat to medium-low. Cover, and let simmer until water is absorbed, about 17 minutes. Remove from heat, and let sit, covered, for 5 minutes. Fluff rice with a fork, and serve warm.

Tips:

  • Use the right rice: Spanish white rice is a short-grain rice that is higher in starch than other types of rice. This gives it a creamy texture and a slightly sticky consistency.
  • Rinse the rice before cooking: Rinsing the rice removes the starch from the surface of the grains, which helps to prevent them from sticking together.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute the heat evenly and prevent the rice from burning.
  • Use a 2:1 ratio of water to rice: This is the general ratio for cooking Spanish white rice. However, you may need to adjust the amount of water depending on the type of rice you are using and the desired consistency.
  • Season the rice: Before cooking the rice, season it with salt, pepper, and other desired spices. This will help to enhance the flavor of the rice.
  • Cook the rice over low heat: Cooking the rice over low heat will help to prevent it from burning and will also allow the rice to absorb all of the liquid.
  • Let the rice rest before serving: After cooking the rice, let it rest for a few minutes before serving. This will allow the rice to firm up and will also make it easier to fluff.

Conclusion:

Spanish white rice is a versatile and flavorful dish that can be served with a variety of main courses. It is a popular side dish in Spanish cuisine, but it can also be used in other dishes, such as paella and arroz con pollo. With its creamy texture and slightly sticky consistency, Spanish white rice is a delicious and satisfying dish that is sure to please everyone at the table.
