Time 40m

Yield 4 servings

Number Of Ingredients 16

2 pounds potatoes, such as russet, peeled and cubed
2 tablespoons sour cream or softened cream cheese
1 large egg yolk
1/2 cup cream, for a lighter version substitute vegetable or chicken broth
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 3/4 pounds ground beef or ground lamb
1 carrot, peeled and chopped
1 onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup beef stock or broth
2 teaspoons Worcestershire, eyeball it
1/2 cup frozen peas, a couple of handfuls
1 teaspoon sweet paprika
2 tablespoons chopped fresh parsley leaves

Steps:

  • Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.
  • While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.
  • Preheat broiler to high. Fill a small flameproof rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.

Tips:

  • Use high-quality ground beef: Opt for a leaner ground beef (80/20 or 90/10) to reduce excess grease and enhance the flavor of the dish.
  • Don't overcrowd the pan: When browning the ground beef, avoid overcrowding the pan, as this can result in steaming rather than browning. Cook the beef in batches if necessary.
  • Season the beef generously: Don't be shy with the seasoning! Add a generous amount of salt, pepper, and other spices to the ground beef to infuse it with flavor.
  • Use a variety of vegetables: Feel free to mix and match different vegetables in your shepherd's pie. Some popular options include carrots, peas, corn, and green beans.
  • Make your own mashed potatoes: For a more authentic and flavorful shepherd's pie, consider making your own mashed potatoes using fresh potatoes. You can boil, steam, or roast the potatoes before mashing them.
  • Don't overmix the mashed potatoes: Be gentle when mixing the mashed potatoes to prevent them from becoming gluey. Overmixing can result in a dense and unappetizing texture.
  • Use a deep baking dish: Choose a deep baking dish to ensure that there is enough space for the ground beef, vegetables, and mashed potatoes. A 9x13 inch baking dish is typically a good option.
  • Bake until golden brown: Bake the shepherd's pie until the top is golden brown and bubbly. This usually takes around 30-40 minutes in a preheated oven.
  • Let it rest before serving: Allow the shepherd's pie to rest for a few minutes before serving. This will help the flavors to meld and the pie to set.

Conclusion:

Shepherd's pie is a classic comfort food that is easy to make and loved by people of all ages. With its savory ground beef filling, tender vegetables, and creamy mashed potato topping, it's a hearty and satisfying dish that is perfect for a weeknight dinner or a special occasion. By following these tips and using high-quality ingredients, you can create a delicious and memorable shepherd's pie that will surely impress your family and friends.
