QUICK CLASSIC GAZPACHO

Quick Classic Gazpacho image

For the ultimate gazpacho, you must peel, seed, dice, salt and drain really good, vine-ripened tomatoes. So what if you don't have time to fuss with fresh tomatoes? I've found the canned variety makes a fine substitute. Another advantage: Fresh tomatoes start to deteriorate as soon as the soup is refrigerated, but canned tomatoes are unaffected by the chill.

  • Utilize ripe, seasonal produce: The freshness and flavor of your gazpacho will depend heavily on the quality of your ingredients. Use the ripest, most flavorful tomatoes, cucumbers, peppers, and onions you can find.
  • Chill thoroughly: Gazpacho is best served cold, so make sure to chill it for at least 2 hours before serving. You can also chill it overnight for an even more refreshing flavor.
  • Adjust the consistency: If you prefer a thinner gazpacho, add more liquid, such as tomato juice or vegetable broth. If you want a thicker gazpacho, add more bread or blend it for a shorter amount of time.
  • Garnish generously: A variety of toppings can add flavor, texture, and color to your gazpacho. Try adding chopped cucumber, tomato, onion, croutons, or herbs like basil or cilantro.
  • Experiment with different flavors: There are many ways to customize your gazpacho. Try adding different herbs, spices, or vegetables. You could also add a bit of heat with chili powder or cayenne pepper.
