SPELT BREAD

This is my Grandad's recipe for bread, normally it calls for half white flour and half whole wheat flour, but as my son has a wheat allergy, I substituted both flours for Spelt flour. Spelt flour is an ancient grain and can be used in place of white flour. It can be found in most Health food stores. Enjoy! Editor's Note: Spelt is an ancient wheat that has recently been marketed as safe for wheat-allergic individuals. Wheat-allergic patients can react to spelt as they do to common wheat. Please consult with your health care provider to ensure spelt is appropriate for you.

Yield 1 Loaf

Number Of Ingredients 5

530 grams (about 5 cups well fluffed up) whole spelt flour
350 grams (~1+1/2 cups) water
10 grams (1+1/2 tsp) salt
3 Tbs honey or sugar or 2 Tbs agave
1/4 cup sourdough starter

Steps:

  • Follow the instructions in the video.
  • Bake at 450 for 45 minutes or until internal temp is 195-200.

Tips:

  • Select the right flour: Spelt flour is the key ingredient in this recipe, so it's important to choose a high-quality flour that is freshly milled and finely ground. This will ensure that your bread has a light and fluffy texture.
  • Use warm water: Warm water helps to activate the yeast and speed up the rising process. Make sure the water is not too hot, as this can kill the yeast.
  • Knead the dough properly: Kneading the dough develops the gluten in the flour, which gives the bread its structure and elasticity. Knead the dough for at least 10 minutes, or until it is smooth and elastic.
  • Let the dough rise in a warm place: The dough needs to rise in a warm place in order to double in size. This can take anywhere from 1 to 2 hours, depending on the temperature of the room.
  • Bake the bread at a high temperature: Baking the bread at a high temperature creates a crispy crust and a fluffy interior. Bake the bread at 450°F for 30-35 minutes, or until the crust is golden brown.

Conclusion:

Spelt bread is a delicious and nutritious alternative to traditional wheat bread. It is easy to make at home with just a few simple ingredients. By following these tips, you can create a perfect loaf of spelt bread that is sure to please everyone at the table.
