1 pound ground beef
1 medium green pepper, chopped
1 medium onion, chopped
3 cups cooked long grain rice
1 can (14-1/2 ounces) stewed tomatoes
1-1/2 cups tomato juice
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon ground mustard
1 teaspoon dried oregano
1/2 teaspoon hot pepper sauce
1 cup shredded cheddar cheese

Steps:

  • In a skillet, cook beef, green pepper and onion over medium heat until meat is no longer pink; drain. Add the next eight ingredients. , Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 35 minutes. Uncover and sprinkle with cheese. Bake 10 minutes longer or until the cheese is melted.

1 large onion , finely sliced
1 bay leaf
3 cardamom pods
small cinnamon stick
25g butter
1 tsp turmeric
100ml hot curry paste
300g basmati rice (washed 3 times)
handful raisin
1l chicken stock
25g flaked almonds , toasted
big handful chopped coriander

Steps:

  • Fry the onions, bay and whole spices in the butter for 10 mins. Sprinkle in the turmeric, then add the curry paste and cook until aromatic. Add the rice and the raisins, stir and cook for a good few mins, then add the stock and bring to the boil. Cover with a tight-fitting lid and when really boiling lower the heat and cook for 10 mins. Turn the heat off but don't lift the lid and leave to sit for 20 mins.
  • Stir in half the almonds and coriander, with the rest of the coriander and the almonds thrown over the top.

1 tablespoon olive oil

1 cinnamon stick

1 small pinch saffron threads
3 tablespoons whole milk

Steps:

  • In a fine-mesh strainer, rinse the rice thoroughly but gently. Soak in a generous amount of water for about an hour then rinse again, strain and reserve. Bring a large pot of generously salted water to a boil.
  • Meanwhile, in a medium skillet, fry the shallots in the oil until golden and crisp. Drain shallots and reserve on a paper towel, saving the delicious flavored oil for another dish.
  • Melt the butter in a small saucepan over medium heat, add the spices and gently fry until they are very aromatic, about 3 minutes. Add the milk to the spice pot and set aside.
