6 hard boiled eggs, peeled and diced
¼ cup celery, thinly sliced
2 tablespoons chives, finely chopped
6 slices bacon, cooked crisp and crumbled

Steps:

6 large eggs
1/3 cup mayonnaise
1 stalk celery, finely chopped
1/2 small onion, finely chopped
1 tablespoon chopped fresh parsley or dill
2 teaspoons Dijon mustard
1 tablespoon lemon juice
Kosher salt and freshly ground black pepper

Steps:

  • Cover the eggs with at least 2 inches of water in a medium saucepan and bring to a rolling boil. Remove from the heat, cover and let sit for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely.
  • Mix together the mayonnaise, celery, onions, parsley, mustard, lemon juice, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl. 1/4 cup unsalted blanched dry roasted peanuts
1 red bird's eye chili, seeds and ribs removed and finely chopped
2 small red onions, finely chopped
3 garlic cloves, minced
1 tablespoon paprika
1/2 teaspoon ground ginger
1 1/2 teaspoons chili powder
5 hard-boiled eggs, peeled and chopped
2 tomatoes, chopped
2 teaspoons chopped cilantro
1 tablespoon soy sauce
1 lime, juice of
1/2 teaspoon salt

Steps:

  • Heat two tablespoons of the olive oil in a large saute pan over low heat.
  • Add the peanuts and saute until golden, about five minutes.
  • Stir in the chilies, onions and garlic, and saute until the onions are translucent, about five minutes.

  • Dice eggs - I use an egg slicer & pass egg through twice at 90 degree angles for regular dice.
