SCALLOPS WITH A SAUTE OF RED CABBAGE

Scallops with a Saute of Red Cabbage image

Provided by Food Network

Number Of Ingredients 9

1-2 tablespoons butter
2 tablespoons or so of flour for dusting
1 1/4 pounds scallops. trimmed of their "foot"
Salt and freshly ground black pepper
2 tablespoons olive oil
Small red cabbage, cut into long strips
Garlic clove, minced
1-2 tablespoons dry white wine or white balsamic vinegar
2 tablespoons chopped parsley

Steps:

  • Heat some butter in a non-stick skillet. Lightly dust the scallops with flour on one side only; shake off excess. When hot, add the scallops, floured side down, and saute, over moderate high heat, without moving for 2 to 3 minutes or until one side develops a crust. Put a lid on the scallops to help finish steaming the top or, if the heat is high enough, the scallops will cook from the bottom through to the top. Lightly season with salt and pepper.
  • Heat the olive oil in a skillet. When hot add the cabbage and garlic and saute for a few minutes just long enough to wilt it down. (You may need to add a touch of water to help it wilt down.) Remove from heat and add white wine to taste. Season with salt and pepper. To serve, pile some cabbage in the center of a plate and top the plate with scallops, putting the browned side up. Garnish with parsley if you wish.

BALSAMIC-GLAZED SEA SCALLOPS

Balsamic-Glazed Sea Scallops image

Pan-seared scallops may seem intimidating to some, but it's really a simple dish to prepare. Sea scallops are amazingly tender, succulent, and mildly flavored, but when you style them up with a flavorful balsamic glaze, they can be a showstopper. They're sophisticated enough for dinner guests, but easy enough for a weeknight dinner.

Time 20m

Yield 4

Number Of Ingredients 10

12 large sea scallops
¼ teaspoon seafood seasoning (such as Old Bay®)
¼ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons unsalted butter
1 tablespoon canola oil
½ cup dry white wine
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 tablespoon chopped fresh tarragon

Steps:

  • Pat scallops thoroughly with a paper towel to remove excess moisture and ensure a good sear. Combine seafood seasoning, salt, and pepper and use to lightly season both sides of the scallops.
  • Heat butter and olive oil in a large skillet over medium-high heat. Add scallops to the skillet, being careful not to crowd. Cook until golden brown and a crust starts to form, about 3 minutes per side. Cook in batches if necessary to avoid steaming the scallops and be careful not to overcook. Remove from the skillet and cover to keep warm.
  • Add white wine, balsamic vinegar, and Dijon mustard to the skillet and cook over medium heat, stirring constantly to scrape up the browned bits from the bottom. Cook until glaze is slightly thick and syrupy, 3 to 4 minutes.
  • Move scallops to a serving plate, drizzle glaze on top, and garnish with chopped tarragon.

Tips:

  1. Choose high-quality scallops. Fresh scallops should have a firm texture and a slightly briny smell. Avoid scallops that are slimy or have a strong fishy odor.
  2. Sear the scallops properly. To get a nice sear on the scallops, make sure your pan is hot before adding the scallops. Sear the scallops for 2-3 minutes per side, or until they are golden brown and cooked through.
  3. Do not overcook the scallops. Scallops are a delicate seafood and can easily be overcooked. Overcooked scallops will be tough and chewy. Cook the scallops just until they are cooked through, about 2-3 minutes per side.
  4. Make sure the cabbage is cooked through. Red cabbage can take a while to cook, so make sure you braise it for at least 30 minutes or until it is tender.
  5. Use a good quality balsamic vinegar. The balsamic vinegar is a key ingredient in the braised red cabbage, so make sure you use a good quality vinegar that has a rich, complex flavor.

Conclusion:

This recipe for Spiced Scallops with Balsamic Braised Red Cabbage is a delicious and elegant dish that is perfect for a special occasion. The scallops are seared until golden brown and cooked through, and the braised red cabbage is tender and flavorful. The balsamic vinegar adds a touch of sweetness and acidity to the dish. This recipe is sure to impress your guests.
