1/4 cup rice vinegar
2 tablespoons low sodium soy sauce
1/4 teaspoon crushed red pepper flakes
2 teaspoons dark sesame oil
1/4 cup sliced green onion
1 (16 ounce) package cabbage and carrot coleslaw mix (or l lb fresh shredded cabbage, mix green and red, and carrots)
1 tablespoon fresh parsley
2 teaspoons sesame seeds, toasted

Steps:

  • Combine the first 4 ingredients in a large bowl.
  • Add the green onions and coleslaw, tossing gently to coat.
  • Sprinkle the slaw with parsley and sesame seeds.

3 Tbsp. fresh lime juice
3 tbsp. Asian fish sauce
3 tbsp water
3 tbsp. sugar
3 garlic cloves minced
2 tbsp. Sriracha chile sauce
2 lbs. Napa cabbage (bagged cole slaw is even better) thinly slices (12) cups
3/4 pound red cabbage (thinly sliced) 3 cups
3 medium carrots, julienned
2 red peppers, thinly sliced
3 tablespoons chopped cilantro
15 mint leaves
Salt & fresh ground pepper

Steps:

  • 1. In a medium bowl, whisk the peanut butter with the lime juice, fish sauce, water, sugar, garlic & Sriracha. 2. In a large bowl, toss the napa cabbage (cole slaw) & red cabbage with the carrots, peppers, cilantro & mint. Toss the coleslaw with the dressing & season with salt & pepper. Serve immediately
