SPICY BAKED BEANS

Spicy Baked Beans image

Tangy and sweet old-fashioned baked beans with a little jalapeno. They're easy to make and great at a BBQ, hamburger night, a picnic, etc. My husband's favorite semi-homemade recipe. Says the sweetness and fire create a super depth of flavor. It's not strong enough to overwhelm the sweet home-style of baked beans.

HEALTHY/SPICY BARBECUE BAKED BEANS AND SPINACH

Healthy/Spicy Barbecue Baked Beans and Spinach image

I originally got this recipe from Eating Well magazine. It was a baked beans and sausage dish. We were making bbq chicken on the grill, so I figured why not try it without the sausage. My bf said it was way better than the original recipe, so I thought I should post it. Feel free to experiment with the beans. I have made it with white kidneys beans and it is still yummy. If you are watching your weight this is a great, easy to prepare side dish for the summer months! Note: Make sure to rinse the beans it will cut down the sodium in this dish, so don't be afraid of the nutrition facts. I don't think recipezaar takes into account rinsing the beans when it figures the nutrition information.

SPICY BAKED BEANS

Spicy Baked Beans image

My spin on a Jimmy Dean bakeoff winner 2005. In my picture, I made 1/2 the recipe which makes plenty. I kept the full amount (1 lb) pork sausage, used chipotle powder for the red pepper and would cut back on the black pepper if you like it less spicy.

SPICY BAKED BEANS

SPICY BAKED BEANS image

Categories     Bean     Side     Bake     Casserole/Gratin     Winter

Yield 6 people

Number Of Ingredients 21

1 cup dried kidney beans
1/2 cup dried cannellini beans
1/2 cup dried Great Northern or navy beans
2 sprigs fresh thyme
1 tablespoon cumin seeds
1 tablespoon olive oil
1 large onion, chopped
1 carrot, chopped
1/2 pound smoked duck breast, in 1/2-by-1-inch nuggets
1 jalapeno pepper, seeded and chopped
2 cloves garlic, chopped
1/2 cup crushed canned tomatoes
4 ripe plum tomatoes, diced
1/4 cup maple syrup
1/4 cup light brown sugar
1 bay leaf
Grated rind of 1 orange
1/2 tablespoon crushed black peppercorns
1/3 cup chopped fresh coriander leaves
1/4 cup cider vinegar, or more, to taste
Salt to taste.

Steps:

  • 1. Place all beans in a bowl, cover with water to a depth of 2 inches, add thyme and soak at least 4 hours. 2. Heat a heavy 3-quart casserole. Add cumin seeds, and cook, stirring, until they dance around and smell toasty. Remove them. 3. Add the oil, onion, carrot and bacon to casserole, and saute over medium heat 10 minutes, until the bacon is golden. Stir in the jalapeno, garlic and toasted cumin seeds. 4. Preheat oven to 250 degrees. 5. Drain beans, and add them along with the canned and fresh tomatoes, maple syrup, brown sugar, bay leaf, orange rind and crushed peppercorns. Stir in all but 1 tablespoon of the coriander, and add 3 cups of water. Cover, and bring to a slow simmer. Place in the oven, and cook 2 hours. 6. Add vinegar and salt to taste. Return to the oven 2 1/2 hours longer, until the liquid has been absorbed but the beans are still moist. Adjust seasonings, adding more vinegar and salt if needed. Sprinkle with remaining coriander, and serve

Tips:

  • To save time, use canned pork and beans instead of dried beans. If using dried beans, rinse and sort them before cooking. Soak the beans in water overnight before cooking to reduce cooking time.
  • For a smoky flavor, add a smoked ham hock or smoked sausage to the beans. You can also cook the beans in a slow cooker with a chunk of hickory wood.
  • Add a teaspoon of chili powder, cumin, or paprika to the beans for a spicy kick.
  • For a sweet and tangy flavor, add a cup of brown sugar, molasses, or ketchup to the beans.
  • Garnish the beans with chopped fresh parsley, cilantro, or green onions before serving.

Conclusion:

Spicy baked beans are a delicious and easy-to-make dish that can be served as a main course or a side dish. They are perfect for a backyard barbecue or a potluck dinner. With a few simple tips, you can make spicy baked beans that are sure to please everyone at your table.
