CHICKEN DRUMSTICKS PIERRE

Chicken Drumsticks Pierre image

This is a very easy recipe for a chicken dish that will suit people who like their chicken spicy, but not TOO hot. Served on a bed of rice, it is colorful and elegant enough for company. UPDATE: I suggest that you not substitute regular mustard for dry mustard. Regular mustard is made by mixing dry mustard with a substantial amount of vinegar and will completely change the flavor of the dish.

CHICKEN PIERRE

Chicken Pierre image

This was the first meat recipe that my younger brother (Pierre) would reliably eat. He's older now, but this is still a family favorite. The sauce is incredible. It goes great with pasta, and even better on rice. This makes a lot of sauce, you could reduce it, but you'd regret it, people will want more sauce. I've been meaning to try this in a crockpot, if anyone does, let me know how it turns out.

SWEET AND SPICY BAKED CHICKEN

Sweet and Spicy Baked Chicken image

Tastes great and looks good, too. Uses hot pepper jelly and butter as a basting sauce; this bird really is both sweet AND spicy! (Note: Watch the bird closely during baking; the sugar in the jelly makes it a beautiful rich, brown color but can also burn it! If the bird is browning too quickly, cover with an aluminum foil tent and continue baking. Test for doneness by cutting into the thigh or wiggling the leg to see if the bone moves easily.)

Yield 6

Number Of Ingredients 4

1 (4 pound) whole chicken
salt and pepper to taste
½ cup hot pepper jelly
1 cup butter

Steps:

  • To Prepare Chicken: Remove giblets and set aside for another use. Rinse chicken in cold water and pat dry with paper towels. Pull front skin down over neck cavity and tuck under chicken. Fold wings under breast, and tie legs and tail together securely with kitchen twine or string.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place chicken on rack in roasting pan. Season with salt and pepper to taste. Melt jelly and 1/2 cup butter or margarine together in a small saucepan or in the microwave. Melt the remaining 1/2 cup butter or margarine separately.
  • Bake chicken in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and baste with melted plain butter or margarine. Bake for another 30 minutes, basting often with the plain butter or margarine. Then baste liberally with the melted jelly/butter mixture and bake for another 15 minutes. Remove from oven and allow to cool 10 minutes before cutting and serving.

Tips:

  • Choose the right chicken: For the best results, use a whole chicken that is about 3 pounds. You can also use chicken breasts or thighs, but you will need to adjust the cooking time accordingly.
  • Use a flavorful marinade: The marinade is what will give your chicken its flavor, so be sure to use a flavorful one. The recipe in the article calls for a marinade made with olive oil, lemon juice, garlic, thyme, and rosemary, but you can use any marinade that you like.
  • Marinate the chicken for at least 30 minutes: The longer you marinate the chicken, the more flavorful it will be. If you are short on time, you can marinate the chicken for as little as 30 minutes, but for best results, marinate it for at least 2 hours.
  • Roast the chicken at a high temperature: Roasting the chicken at a high temperature will help to create a crispy skin and juicy meat. The recipe in the article calls for roasting the chicken at 450 degrees Fahrenheit, but you can adjust the temperature according to your own oven.
  • Let the chicken rest before carving: Once the chicken is cooked through, let it rest for 10-15 minutes before carving. This will help the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Spicy Baked Chicken Pierre is a delicious and easy-to-make dish that is perfect for any occasion. The chicken is marinated in a flavorful blend of spices and herbs, then roasted until crispy and juicy. Serve it with your favorite sides for a complete meal that everyone will love.
