1 cup buttermilk, well shaken
4 cups cornflake crumbs
8 assorted chicken pieces, skin on

Steps:

  • Preheat the oven to 350 degrees F. Line a cookie sheet with aluminum foil and spray the foil with cooking spray.
  • Shake the hot sauce into the buttermilk and pour into a shallow dish. Place the cornflake crumbs in another shallow dish. Dip each piece of chicken in the buttermilk, and then roll it in the crumbs. Place the coated chicken pieces on the cookie sheet and sprinkle with salt and pepper.

1 cup crushed cornflakes
1 cup all-purpose flour
1-1/2 teaspoons seasoned salt
4 chicken drumsticks (4 ounces each), skin removed
4 bone-in chicken thighs (about 1-1/2 pounds), skin removed
3/4 cup egg substitute

6 cups nonfat buttermilk
1/4 cup plus 5 teaspoons salt
1/3 cup Tabasco Sauce (optional)
2 two- to three-pound chickens, each cut into 8 pieces for frying
3 cups all-purpose flour
1 tablespoon freshly ground black pepper
1 1/2 teaspoons ground cayenne pepper
2 tablespoons baking powder
2 pounds vegetable shortening
6 tablespoons bacon drippings (optional)

Steps:

  • Combine buttermilk, 1/4 cup salt, and Tabasco sauce, if using, in a bowl. Transfer to a large, airtight container. Add chicken pieces, turning to coat in the liquid. Cover, and refrigerate at least 2 hours or overnight.
  • Heat oven to 200 degrees. Combine flour, remaining 5 teaspoons salt, black and cayenne peppers, and baking powder.
  • Place dredging mixture in a large brown paper bag. Shake vigorously. One at a time, place chicken pieces in the bag, and shake to coat. Place coated pieces on a clean plate or tray. Heat vegetable shortening (and bacon drippings, if using) in two 10-inch cast-iron skillets over medium-low heat. Using a frying thermometer to measure temperature, bring shortening to 375 degrees; it should be at a medium, not a rolling, boil. Use tongs to place thighs and drumsticks in skillets. Fry until coating is dark golden on bottom, 10 to 14 minutes; then, using tongs, turn chicken over. Cook until coating is dark golden, another 10 to 14 minutes. An instant-read thermometer inserted into a thigh should register 170 degrees. Drain on brown paper bags or several layered paper towels. Transfer cooked pieces to baking sheets, and place in the oven to keep warm while frying remaining chicken. Using a slotted spoon, remove any bits of coating left in skillets, and discard. Place breasts and wings in skillets. Cook 10 to 14 minutes on each side. Drain on brown paper bags. Remove dark meat from oven, and serve.

3 cups buttermilk, divided
2 garlic cloves, crushed through a press
1 teaspoon hot pepper sauce
2 (3 1/2 lb) whole chickens (each cut into 8 pieces)
2 cups vegetable oil
2 cups flour
2 tablespoons paprika
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon black pepper, freshly ground
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (to taste)
1 1/2 teaspoons salt
1 1/2 cups milk
salt and pepper, to taste
hot pepper sauce, to taste

Steps:

  • In a bowl, combine 2 cups buttermilk, garlic and pepper sauce. Add chicken and toss. Cover and refrigerate for 4 hours or overnight.
  • Preheat oven to 400 degrees.
  • In a large heavy skillet, heat oil over medium high heat until hot but not smoking.

  • Discard marinade but reserve 1/4 c of seasoned flour and leave 3 T of oil in the skillet.
  • Bake chicken 20-25 minutes.
  • Transfer to paper towel lined baking sheet.
  • Return skillet with reserved oil to stove and heat over medium low heat. Whisk in reserved flour and simmer for 2 minutes.
  • Whisk in 1 cup buttermilk and heat;do not boil.
  • Season with salt and pepper and pepper sauce to taste.
  • Transfer chicken to a platter.
  • Serve with potatoes and gravy.

1 quart buttermilk
1/4 cup hot sauce (I like Crystal for this)
3 tablespoons minced garlic
2 teaspoons celery salt
Salt and freshly ground black pepper
1 (3 1/2- to 4-pound) chicken, cut into 8 serving pieces
4 cups all-purpose flour
4 large eggs
1/2 cup milk
Vegetable oil, for frying
Pepper Jelly Drizzle, for serving

Steps:

  • In a large bowl, whisk together the buttermilk, hot sauce, garlic, the celery salt, 2 teaspoons salt, and 1 tablespoon pepper. Add the chicken, making sure it is evenly coated with the buttermilk mixture. Cover and refrigerate overnight.
  • Remove the chicken from the refrigerator and let come to room temperature, about 1 hour. Remove it from the marinade; discard the marinade.
  • In another large bowl, whisk together the flour, 5 teaspoons salt, and 4 teaspoons pepper. In a medium bowl, whisk the eggs, milk, and remaining 1 teaspoon salt to combine.
