I am a salmon lover. This is a great recipe for a slightly exotic flavor of Indian inspiration with a maple twist. The flavor is exceptional, delicious, and unique. Orange zest may be added for an extra flavor twist.

Categories     Dinner, Main course

Time 25m

Yield Serves 2

Number Of Ingredients 15

2 salmon fillets , about 140g/5oz each
juice 1 lime
pinch chilli powder
½ tsp ground cumin
½ tsp smoked paprika
½ tsp ground coriander
pinch of soft brown sugar
drizzle of sunflower oil
steamed rice , to serve
1 ripe avocado , peeled and diced
handful cherry tomatoes , quartered
2 spring onions , sliced
juice 1 lime
splash of olive oil
bunch of coriander , half roughly chopped, half picked into sprigs

Steps:

  • Put the salmon in a bowl, pour over the lime juice and leave the salmon to 'cure' for 5 mins. Meanwhile, mix all the spices together with the sugar. Lift the salmon out of the lime juice and roll in the spices so it's completely coated.
  • Heat grill to high. Grease a baking tray, then sit the salmon, flesh-side up, on the tray. Grill for 5 mins, until the salmon is cooked through and the edges are starting to blacken. While the salmon is cooking, gently mix all the salsa ingredients together with the roughly chopped coriander. When the fish is cooked, serve with the salsa, some rice and the coriander sprigs.

SPICY SALMON MARINADE

Spicy Salmon Marinade image

This white wine, rosemary, and garlic marinade is given a kick with crushed red pepper and hot sauce. As written, the heat level is mild, but adjust to your tastes by adding more hot sauce or a spicier hot sauce. I like to use a Sauvignon Blanc or Pinot Grigio, and serve the rest of the bottle chilled with dinner. This salmon tastes best when cooked on an outdoor grill.

Time 2h5m

Yield 4

Number Of Ingredients 9

1 (1 1/2-pound) skin-on center-cut salmon fillet
6 fluid ounces dry white wine
1 tablespoon olive oil
1 clove garlic, minced
1 teaspoon crushed red pepper flakes
1 teaspoon hot sauce
½ teaspoon dried rosemary
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Cut fish into 4 portions.
  • Whisk together wine, olive oil, garlic, pepper flakes, and hot sauce in a small bowl. Pour over salmon and seal bag closed, letting out excess air. Place in refrigerator for 1 hour, turning after 30 minutes. Remove salmon from the marinade, letting excess drip off, and place on a plate to stand at room temperature for 15 minutes. Discard any remaining marinade.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place salmon flesh-side down on the hot grill. Close the lid and grill for 3 minutes. Flip and grill an additional 3 to 4 more minutes. Sprinkle with salt before serving, if desired.

Yield Serves 4

Number Of Ingredients 12

1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cloves
3 1/2 pounds lamb shoulder o-bone (round-bone) chops, trimmed, boned, cut into 1-inch pieces
2 tablespoons vegetable oil
5 cups chopped onions
2 teaspoons minced peeled fresh ginger
1 cup water
2/3 cup dried apricots, quartered
1 teaspoon white wine vinegar
1 teaspoon sugar

Steps:

  • Mix first 4 ingredients in large bowl. Add lamb and toss to coat. Heat vegetable oil in heavy large pot over medium-high heat. Add chopped onions and sauté until tender and golden, about 10 minutes. Add lamb and sprinkle with salt. Sauté until brown, about 5 minutes. Add minced ginger and stir 1 minute. Add 1 cup water and bring to boil. Reduce heat, cover and simmer until lamb is tender, stirring occasionally, about 1 hour.
  • Add apricots to pot and simmer uncovered until liquid is slightly thickened and reduced, about 10 minutes. Stir in vinegar and sugar. Season to taste with salt. Divide stew among 4 bowls.

Tips:

  • For a crispy skin, ensure that the salmon fillet is patted dry before cooking.
  • Use a non-stick skillet or a well-seasoned cast iron skillet to prevent the salmon from sticking.
  • Start by searing the salmon skin-side down until it becomes crispy and golden brown. This will help to keep the flesh of the salmon moist and tender.
  • Once the skin is crispy, flip the salmon and continue cooking until it is cooked through. The cooking time will vary depending on the thickness of the fillet.
  • To test if the salmon is cooked through, insert a fork into the thickest part of the fillet. If it flakes easily, the salmon is cooked.
  • Serve the salmon immediately with your favorite sides.

Conclusion:

This spicy cardamom salmon is a flavorful and easy-to-make dish that is perfect for a weeknight dinner. The salmon is cooked to perfection and the spicy cardamom sauce is sure to please everyone at the table. Serve with your favorite sides, such as roasted vegetables, rice, or quinoa.
