1 pound boneless skinless chicken breasts, cubed
2 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, minced
2 chipotle peppers in adobo sauce
2 cans (14-1/2 ounces each) chicken broth, divided
1 can (15 ounces) hominy, rinsed and drained
1 can (4 ounces) chopped green chilies
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon pepper

Steps:

  • In a large skillet, brown chicken in oil. With a slotted spoon, transfer chicken to a 3- or 4-qt. slow cooker. In the same skillet, saute onion and garlic in drippings until tender; add to chicken., Place chipotle peppers and 1/4 cup broth in a blender or food processor; cover and process until blended. Add to chicken mixture. Stir in the hominy, chilies, seasonings and remaining broth. Cover and cook on low for 4-5 hours or until chicken is tender.

1 tablespoon olive oil
2 chicken breasts, cut into 1-inch pieces
1 small onion, chopped
2 chipotle peppers in adobo sauce, seeded and diced
2 cloves garlic, minced
1 pinch garlic salt, or to taste
1 (32 ounce) can enchilada sauce
2 (16 ounce) cans hominy
1 (15 ounce) can diced tomatoes
1 (15 ounce) can black beans, rinsed and drained
1 ½ cups water
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1 pinch cayenne pepper
salt and ground black pepper to taste
¼ cup chopped cilantro

Steps:

  • Heat oil in a large pot over medium-high heat. Add chicken, onion, chipotle peppers, garlic, and garlic salt; cook and stir until lightly browned, 5 to 8 minutes.

1 clove Garlic chopped
1/4 t salt
5 Cups Chicken Broth
3 Cups Shredded Rotisserie Chicken
1 15 oz can hominy rinsed (we used garbanzo beans as hominy wasn't available
1 T Chipotles in adobo chopped
For toppings:
Fresh Salsa
Chopped Avocado
Tortilla Chips

Steps:

  • Cook the onions, celery, garlic and salt in the oil until soft, 4-6 minutes Add broth, chicken, hominy (chickpeas), and chipotles, simmer 5 or more minutes. Serve with toppings and tortillas Notes: We used garbanzo beans because we couldn't find hominy. It took most of a rotisserie chicken bought at Zabars. There was a thigh and two legs and two wings left over.
