I've never found a recipe for crispy ginger beef like the ones in the restaurants. I have experimented, and found something pretty close. Serve with rice and some steamed veggies.

Beef Essentials: Crispy, Spicy Beef image

This is an easy/peasy way to make crispy beef, and after the marinating, it can be ready in a matter of minutes. The sriracha, and tamari blend perfectly with the coconut sugar, garlic, and ginger to produce a amazing depth of flavor. I will be trying this marinade on some chicken breasts tomorrow. So, you ready... Let's get...

Time 2h5m

PLAN/PURCHASE
1 lb beef roast, thinly sliced
1/4 c pineapple juice
2 Tbsp tamari sauce
2 Tbsp coconut sugar
1 Tbsp toasted sesame seed oil
1 Tbsp sriracha
1 Tbsp chili sauce
1 clove garlic, minced
1 tsp ground ginger
ADDITIONAL ITEMS
rice, for serving
toasted sesame seeds, for garmish

Steps:

  • 1. PREP/PREPARE
  • 2. I am using a beef bottom round for this recipe, but you could always try different cuts.
  • 3. To get a good sear on the steak, use a good heavy-bottomed pan, or Plancha grill (iron griddle). Cast iron is excellent for this recipe.
  • 4. Gather your ingredients (mise en place).
  • 5. Thinly slice the beef against the grain.
  • 6. Chef's Tip: If you place the beef in the freezer for about 30 minutes, it will firm it up, and make slicing easier.
  • 7. Using a bowl or Ziploc bag, mix the reminder of the ingredients together, and then toss in the beef.
  • 8. Place in the refrigerator for 1 - 2 hours.
  • 9. Heat up your pan or Plancha grill to high heat. Lay the beef in the pan or grill, in a single layer, and allow to cook until beginning to crisp, about 1 - 2 minutes per side.
  • 10. Chef's Tip: Do not crowd the beef, or it will steam, not crisp.
  • 11. PLATE/PRESENT
  • 12. My favorite way to serve this is in a bowl with some long-grained white rice, and sautéed carrots. Enjoy.
  • 13. Keep the faith, and keep cooking.

Tips:

  • Use the right cut of beef: Sirloin, flank steak, or skirt steak are all good choices for this recipe. They are relatively inexpensive and have a good amount of marbling, which will help keep the beef moist and flavorful during cooking.
  • Slice the beef against the grain: This will help tenderize the beef and make it easier to chew. To slice against the grain, hold the knife at a 45-degree angle to the cutting board and slice the beef in thin strips.
  • Marinate the beef: Marinating the beef in a mixture of soy sauce, rice wine, garlic, and ginger will help flavor it and make it more tender. You can marinate the beef for as little as 30 minutes or up to overnight.
  • Use a hot wok or skillet: A hot wok or skillet will help sear the beef and lock in the flavor. Make sure the wok or skillet is smoking hot before adding the beef.
  • Cook the beef in batches: Do not overcrowd the wok or skillet, or the beef will not cook evenly. Cook the beef in batches, stirring constantly, until it is browned and cooked through.
  • Make sure the sauce is thick and syrupy: The sauce should be thick and syrupy, not watery. If the sauce is too thin, cook it over high heat for a few minutes, stirring constantly, until it thickens.

Conclusion:

Spicy Crispy Beef is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. The beef is tender and flavorful, and the sauce is spicy and addictive. Serve Spicy Crispy Beef with rice or noodles, and enjoy!
