2 green onions, finely chopped
½ lime, juiced
1 tablespoon salsa, or more to taste
1 clove garlic, minced
1 teaspoon sour cream
1 teaspoon white vinegar
½ teaspoon cayenne pepper
¼ teaspoon cumin
salt and ground black pepper to taste

Steps:

1 clove garlic, minced
1 medium ripe red tomato, seeded and coarsely chopped
1 lime, juiced

2 green onions, thinly sliced
1/4 cup finely chopped fresh basil leaves
1 tablespoon crushed red pepper flakes, or to taste

Steps:

  • In a large mixing bowl, mash 1 of the chopped avocados with a fork. Add the remaining chopped avocados, the garlic, tomatoes, lime juice, lemon juice, green onions, basil, crushed red pepper flakes, salt and pepper; stir to combine. Taste and adjust the seasoning, as needed, with crushed red pepper flakes, salt and pepper, to taste.
  • If not serving immediately, sprinkle a bit of lemon juice over the top and cover put plastic wrap directly on top of the guacamole surface. Store in the refrigerator for up to 2 days.

3 avocados
1 large red onion
4 -5 small roma tomatoes (or both!!) or 1/4 cup diced roasted red pepper (or both!!)
4 -5 tomatillos
1/2 cup jalapeno peppers or 1/2 cup serrano pepper, your choice
3 garlic cloves
1 teaspoon sea salt
1/4 teaspoon cayenne pepper

Steps:

  • Pit and dice avocados. I like mine very chunky, but you could mash or puree them if you like a creamier guacamole.
  • Dice red onion, peppers, garlic, tomatoes and tomatillos. Leave the ribs and seeds in the peppers if you like them to be VERY spicy! Again, chop everything smaller or larger depending on your preference of texture.
  • Add cilantro.
  • Toss diced veggies with cayenne pepper, red pepper flakes, salt and lime juice.
  • Add the mixture to the avocados and toss (or mix if your avocados are pureed) evenly.
  • Adjust seasonings to taste, chill one hour to allow flavors to blend.

There has never been a time I served it and didn't get asked for the recipe.

1 large avocado
1/2 small red onion
1/2 lime
1/2 tomatoes, de-seeded
4 Thai red chili peppers (depending on how spicy you like it!) or 1 -2 jalapeno (depending on how spicy you like it!)
3 tablespoons cilantro (handful)
1 dash sea salt (key words -- SEA salt)
1 garlic clove

  • Chop the garlic and chilies in really fine pieces, The finer the better. Most recipes would tell you to de-seed your peppers, but not I. That's where the kick comes in.
  • Chop your onion, in fine cubes. Wear your goggles if you need to.
  • Chop the tomato. Its important to remove the seeds so the guac isn't too runny.
  • Add the avocado. Here's a cool trick on how to cut it like a pro.
  • Add the sea salt. I normally add around 1 tbsp, but taste test it as always.
  • Add in the lime juice and chopped cilantro last.
  • Stir! If you have a mortar & pestle, that's even better.
