4 pounds chicken wings, tips removed
For the sauce:
2 tablespoons extra-virgin olive oil
1 tablespoon minced garlic (about 2 cloves)
1 jalapeno pepper, minced (remove seeds for less heat)
1 12-ounce bottle hot pepper sauce
4 tablespoons unsalted butter
1 tablespoon white vinegar
1 tablespoon fresh lime juice

Steps:

1 cup white vinegar
1 cup kosher salt
1/2 cup sugar
1/4 cup dried whole chile de arbol
Canola oil, for frying
1 cup peeled garlic cloves
1 cup olive oil
2 cups Frank's RedHot, or other hot sauce
3 stalks celery, thinly sliced on the bias
2 carrots, peeled and thinly sliced on the bias
1 cup cider vinegar
1 tablespoon sugar
1 tablespoon kosher salt
1 cup crumbled Maytag blue cheese, or other blue cheese
1/2 cup Greek yogurt
1/2 cup mayonnaise
1 teaspoon cracked black pepper
1 teaspoon celery salt

Steps:

  • For the wings: Preheat the oven to 325 degrees F. Combine the wings, vinegar, salt, sugar and chile in a large pot. Cover with water and bring to a boil. Once at a boil, remove from the heat, strain the wings and pat them dry. Place the wings on a baking sheet. Bake until the wings are dry, about 15 minutes.
  • While the wings bake, fill a large, deep pot with 3 inches of oil. Place over medium-high heat and bring to 350 degrees F on a deep-fry thermometer. 1 teaspoon sugar
1 teaspoon garlic powder

2 teaspoons water
2 teaspoons cornstarch

Steps:

2 lbs chicken wings
1 cup flour
2 cups vegetable oil
1 1/2 tablespoons ground black pepper
1 1/2 tablespoons seasoning salt
1 cup margarine
1/2 cup Frank's red hot sauce
2 garlic cloves

Steps:

  • Thaw wings and pat dry, set aside.
  • Preheat Oven to 350 Degrees.
  • Combine flour, pepper, and seasoned salt in a medium-sized bowl.
  • Add oil to large skillet and heat on medium-high.
  • When oil is ready for frying, use tongs to coat wings in flour/pepper/salt mixture and add to pan.
  • Be sure to add wings to pan slowly as to not bring doing the temperature of the oil too quickly.
  • Fry wings until slightly golden on each side.
  • You will move wings to a baking sheet with either a cooling rack or baking grid on top of the sheet. You can line with foil as well to minimize cleanup. Basically, you want the wings to cook and the oil to drip down to the pan, so whatever you need to use to do that will work!
  • Place wings in oven for 30-40 minutes.
  • You should remove when they are crispy enough for you--I like mine crispy so I tend to go for 40-45 minutes.
  • While wings are in the oven, prepare the sauce.
  • Melt 1/2 cup of margarine in a small saucepan.
  • Add garlic, finely chopped.
  • Sautee garlic in butter for 3-4 minutes on medium-low heat.
  • Add hot sauce.
  • When wings are done, remove from oven and let them rest for 5 minutes or so.
  • Use tongs and coat wings in sauce and plate.
  • Enjoy with ranch or blue cheese dressing!

Enjoy with chunky blue cheese or ranch dressing.

12 chicken wings, cut into thirds, tips discarded
¼ cup red wine vinegar
¼ cup malt vinegar
2 tablespoons Catalina salad dressing
2 teaspoons hot pepper sauce
1 tablespoon chili powder
1 teaspoon cayenne pepper
1 teaspoon ground black pepper
1 teaspoon minced garlic
1 pinch dried oregano
1 teaspoon prepared horseradish
½ cup all-purpose flour
3 tablespoons chili powder
4 cups peanut oil for frying
hot pepper sauce (e.g. Tabasco™), or to taste
