7 -8 ounces sweet Italian sausage (about 2)
2 cups flour
1/3 cup grated parmesan cheese
1 tablespoon baking powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon oregano
1 egg
14 ounces pizza sauce
2 tablespoons olive oil

Steps:

  • Remove sausages from casings, break into small pieces and fry in a skillet until cooked and browned. Drain sausage on paper towels, but save grease in skillet.
  • Heat oven to 400 degrees F. Grease muffin cups or use paper liners.
  • Mix flour, Parmesan cheese, baking powder, salt, pepper and oregano in a large bowl. Break egg into another bowl and beat. Add pizza sauce and mix well. Add 3 T. fat, start with the remaining fat in the skillet and make up the difference with olive oil. Add sausage and mix well. Pour the mixture over the dry ingredients and mix just until blended. Scoop the very thick batter into muffin cups. Bake 20 to 25 minutes or until firm on top. Cool 30 minutes before serving.

Butter, for greasing the pan
2 tablespoons extra-virgin olive oil
Two 3-to-4-ounce sweet or spicy Italian sausage links, casings removed
2 cloves garlic, minced
1 cup shredded smoked mozzarella (4 ounces)
4 large eggs, at room temperature
2 cups milk, at room temperature
1 1/2 cups all-purpose flour
2 small green onions, pale green and white parts only, finely sliced to yield 1/4 cup
3 tablespoons chopped fresh basil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Maple syrup, for drizzling

Steps:

  • Place an oven rack in the center of the oven and preheat to 400 degrees F. Butter the muffin cups.
  • Heat the oil over medium heat in a medium nonstick skillet. Add the sausage and break it into 1/4-to-1/2-inch pieces using a wooden spoon. Cook until brown and cooked through, about 6 minutes. Add the garlic and cook until aromatic, about 30 seconds. Spoon about 1 1/2 tablespoons sausage into each muffin cup. Sprinkle the cheese on top of the sausage.
  • Blend the eggs in a blender until frothy, about 15 seconds. Add the milk, flour, green onions, basil, salt and pepper. Blend until just incorporated. Pour the batter into the muffin cups, filling each cup to just below the rim. Bake, without opening the oven door, until puffed and golden, about 35 minutes.
  • Place the popovers on a platter and drizzle with maple syrup.

¼ cup chopped green onions
¼ cup chopped sweet red pepper
¾ cup all-purpose flour
½ cup cornmeal
1 tablespoon minced fresh cilantro
1 teaspoon baking soda
½ teaspoon salt
¾ teaspoon minced fresh thyme
1 egg, beaten
1 cup buttermilk
¾ cup shredded sharp Cheddar cheese

Steps:

  • In a skillet, cook sausage, onions and red pepper over medium heat until meat is no longer pink; drain and set aside. In a large bowl, combine the flour, cornmeal, cilantro, baking soda, salt and thyme. In another bowl, combine egg and buttermilk. Stir into dry ingredients just until moistened. Fold in cheese and sausage mixture. Fill greased muffin cups two-thirds full. Bake at 375 degrees F for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.

1 cup shredded mozzarella cheese (4 oz)
2 tablespoons grated Parmesan cheese
1/2 cup grape tomatoes, cut in half
2 tablespoons fresh basil leaves, cut into strips

Steps:

  • Heat oven to 400°F. Lightly spray bottom of 8-inch square (2-quart) baking dish with cooking spray. In medium bowl, stir Bisquick mix, butter and water until dough forms. Press dough in bottom of pan.
  • In 10-inch skillet, cook sausage and bell pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until sausage is no longer pink; drain if necessary. Spread sausage mixture over crust; spread pasta sauce over sausage. Sprinkle with cheeses.

Steps:

  • Heat oven to 350°F. Spray 2 rimmed 15x10-inch baking pans with cooking spray.

1 (8 ounce) tomato sauce (can use more to taste)
6 English muffins, split and toasted
2 cups shredded mozzarella cheese

Steps:

  • Brown sausage in skillet; drain any excess fat.
  • Add bell pepper, onion, mushrooms, seasoning and garlic; cook stirring for 2 minutes.
  • Stir in tomato sauce and simmer uncovered, for 20 minutes.
