20 large shrimp (about 1 pound), peeled and deveined (tails left intact; optional)
3 garlic cloves, minced
1/2 jalapeno chile (stem, ribs, and seeds removed), finely chopped
1 tablespoon fresh lime juice
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper

Steps:

  • Toss together shrimp, garlic, jalapeno, lime juice, and 1 tablespoon oil; season with salt and pepper. Marinate in refrigerator for 45 minutes.

  • Sauté the shrimp in a hot skillet. This will help to create a nice sear and lock in the flavor.
  • Use a flavorful pasta sauce. A simple tomato sauce or a creamy Alfredo sauce will pair well with the shrimp.
  • Add some vegetables. Vegetables such as broccoli, zucchini, and bell peppers will add color and nutrients to the dish.
  • Top with fresh herbs. Fresh herbs such as parsley, basil, or cilantro will add a pop of flavor and color to the dish.
