Yield Makes 4 servings

Number Of Ingredients 13

4 tablespoons olive oil, divided
2 skinless, boneless chicken thighs
Kosher salt
3 large garlic cloves, minced
2 tablespoons ground cumin
2 tablespoons tomato paste
3/4 teaspoon crushed red pepper flakes
2 bay leaves
2 15-ounce cans chickpeas, rinsed, drained
1/2 cup chopped drained roasted red peppers from a jar
2 tablespoons (or more) fresh lemon juice
2 cups 1" cubes country-style bread
3 tablespoons coarsely chopped flat-leaf parsley

Steps:

  • Heat 2 tablespoons oil in a medium pot over medium-high heat. Season chicken with salt; add to pot and cook, turning once, until browned, 8-10 minutes. Transfer to a plate. Reduce heat to low and let oil cool for 1 minute; add garlic and cook, stirring often, until fragrant, 30-60 seconds. Add cumin, tomato paste, and red pepper flakes; stir until a smooth paste forms, about 1 minute. Add reserved chicken with any accumulated juices, along with bay leaves and 4 cups water. Scrape up any browned bits. Bring to a boil; reduce heat to medium-low and simmer, uncovered, occasionally stirring, until chicken is tender, about 20 minutes.
  • Transfer chicken to a plate. Add chickpeas to pot; bring to a simmer and cook for 5 minutes. Shred chicken; add to stew. Add red peppers. Stir in remaining 2 tablespoons oil and 2 tablespoons lemon juice; simmer for 1 minute. Season with salt and more lemon juice, if desired. Divide bread cubes among bowls. Ladle soup over. Garnish with parsley.

SPICED CHICKPEA STEW WITH COCONUT AND TURMERIC

Spiced Chickpea Stew With Coconut and Turmeric image

Spiced chickpeas are crisped in olive oil, then simmered in a garlicky coconut milk for an insanely creamy, basically-good-for-you stew that evokes stews found in South India and parts of the Caribbean. While the chickpeas alone would be good as a side dish, they are further simmered with stock, bolstered with dark, leafy greens of your choosing and finished with a handful of fresh mint. When shopping, be sure to avoid low-fat coconut milk, coconut milk meant for drinking or cream of coconut: All are very different and would not be suitable here.

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 14

1/4 cup olive oil, plus more for serving
4 garlic cloves, chopped
1 large yellow onion, chopped
1 (2-inch) piece ginger, finely chopped
Kosher salt and black pepper
1 1/2 teaspoons ground turmeric, plus more for serving
1 teaspoon red-pepper flakes, plus more for serving
2 (15-ounce) cans chickpeas, drained and rinsed
2 (15-ounce) cans full-fat coconut milk
2 cups vegetable or chicken stock
1 bunch Swiss chard, kale or collard greens, stems removed, torn into bite-size pieces
1 cup mint leaves, for serving
Yogurt, for serving (optional)
Toasted pita, lavash or other flatbread, for serving (optional)

Steps:

  • Heat 1/4 cup oil in a large pot over medium. Add garlic, onion and ginger. Season with salt and pepper, and cook, stirring occasionally until onion is translucent and starts to brown a little at the edges, 3 to 5 minutes.
  • Add 1 1/2 teaspoons turmeric, 1 teaspoon red-pepper flakes, and the chickpeas, and season with salt and pepper. Cook, stirring frequently, so the chickpeas sizzle and fry a bit in the spices and oil, until they've started to break down and get a little browned and crisp, 8 to 10 minutes. Remove about a cup of chickpeas and set aside for garnish.
  • Using a wooden spoon or spatula, further crush the remaining chickpeas slightly to release their starchy insides. (This will help thicken the stew.) Add coconut milk and stock, and season with salt and pepper.
  • Bring to a simmer, scraping up any bits that have formed on the bottom of the pot. Cook, stirring occasionally, until stew has thickened, 30 to 35 minutes. (Taste a chickpea or two, not just the liquid, to make sure they have simmered long enough to be as delicious as possible.) If after 30 to 35 minutes, you want the stew a bit thicker, keep simmering until you've reached your desired consistency. Determining perfect stew thickness is a personal journey!
  • Add greens and stir, making sure they're submerged in the liquid. Cook until they wilt and soften, 3 to 7 minutes, depending on what you're using. (Swiss chard and spinach will wilt and soften much faster than kale or collard greens.) Season again with salt and pepper.
  • Divide among bowls and top with mint, reserved chickpeas, a sprinkle of red-pepper flakes and a good drizzle of olive oil. Serve alongside yogurt and toasted pita if using; dust the yogurt with turmeric if you'd like.

SPICY KALE AND CHICK-PEA STEW

Spicy Kale and Chick-Pea Stew image

Categories     Soup/Stew     Onion     Tomato     Stew     Vegetarian     Low Cal     Spice     Kale     Chickpea     Bell Pepper     Winter     Gourmet

Yield Makes about 14 cups, serving 8 to 10

Number Of Ingredients 17

1 1/2 cups dried chick-peas, soaked overnight in enough water to cover them by 4 inches, drained, and rinsed
10 cups water
2 large onions, chopped coarse
3 large garlic cloves, minced
1/4 cup olive oil
2 green bell peppers, chopped coarse
1 1/2 pounds kale, coarse stems discarded and the leaves washed well and chopped
two 28-ounce cans plum tomatoes including the juice, chopped
a 6-ounce can tomato paste
2 1/2 tablespoons chili powder
1 teaspoon dried thyme
1 teaspoon dried orégano
1 teaspoon dry hot red pepper flakes
1 teaspoon ground cumin
1 teaspoon sugar
1 bay leaf
steamed couscous or rice as an accompaniment

Steps:

  • In a large saucepan simmer the chick-peas in the water, covered partially, for 1 1/2 hours, or until they are tender. In a heavy kettle cook the onions and the garlic in the oil over moderate heat, stirring occasionally, until the vegetables are golden, add the bell peppers, and cook the mixture, stirring, for 10 minutes. Add the chick-peas with the cooking liquid, the kale, the tomatoes with the juice, the tomato paste, the chili powder, the thyme, the orégano, the red pepper flakes, the cumin, the sugar, and the bay leaf, bring the liquid to a boil, and simmer the stew, stirring ocassionally, for 1 hour. Discard the bay leaf, season the stew with salt, and serve the stew on the couscous or rice.

Tips:

  • Use fresh kale: Fresh kale is more flavorful and nutritious than wilted kale. If you can't find fresh kale, you can use frozen kale, but be sure to thaw it and drain it before using.
  • Don't overcook the kale: Kale cooks quickly, so be careful not to overcook it. Overcooked kale is tough and bitter.
  • Use a variety of spices: This recipe uses a variety of spices, including cumin, coriander, and turmeric. These spices give the stew a warm and flavorful taste.
  • Add a squeeze of lemon juice: A squeeze of lemon juice brightens up the stew and adds a touch of acidity.
  • Serve with rice or bread: This stew is delicious served with rice or bread. The rice or bread will help to soak up the flavorful broth.

Conclusion:

This spicy kale and chickpea stew is a delicious and healthy meal that is perfect for a cold winter day. The stew is packed with flavor and nutrients, and it is easy to make. So next time you're looking for a warm and comforting meal, give this stew a try. You won't be disappointed!
