MARINATED MOZZARELLA

Aromatic herbs and a pinch of spicy red-pepper flakes enliven the subtle, creamy flavor of fresh mozzarella.

Provided by Martha Stewart

Categories     Food & Cooking     Lunch Recipes

Time 25m

Number Of Ingredients 8

1 pound fresh mozzarella, cut into 1/4-inch-thick slices
3 tablespoons extra-virgin olive oil
1 teaspoon fresh thyme
1 teaspoon finely chopped fresh rosemary
1 teaspoon chopped fresh oregano
1/4 teaspoon red-pepper flakes
Coarse salt and freshly ground pepper, to taste
Olives, crackers, bread, and sliced cured meats (such as salami Toscana), for serving

Steps:

  • Combine oil, herbs, red-pepper flakes, salt, and pepper in a small bowl. Drizzle over mozzarella. Let stand for at least 20 minutes (or up to 1 hour). Serve with olives, crackers, bread, and cured meats.

Tips:

  • Choose fresh and high-quality ingredients, especially the mozzarella cheese. Fresh mozzarella has a soft and milky flavor that pairs well with the spicy marinade.
  • Use a sharp knife to slice the mozzarella into even pieces. This will help the marinade penetrate the cheese evenly.
  • Don't overcrowd the mozzarella in the jar. Leave some space between the pieces so that the marinade can circulate freely.
  • Let the mozzarella marinate for at least 24 hours, but no longer than 3 days. This will give the cheese time to absorb the flavors of the marinade.
  • Serve the marinated mozzarella at room temperature. This will allow the flavors to fully develop.
  • Garnish the marinated mozzarella with fresh oregano and capers before serving. This will add a pop of color and flavor.

Conclusion:

Spicy marinated mozzarella with oregano and capers is a delicious and easy-to-make appetizer that is perfect for any occasion. The zesty marinade adds a nice kick of flavor to the creamy mozzarella, and the oregano and capers add a touch of freshness and acidity. This dish is sure to impress your guests, and it's also a great way to use up leftover mozzarella cheese. So next time you're looking for a simple and delicious appetizer, give this recipe a try. You won't be disappointed!
