CHEF JOHN'S BEURRE BLANC

Chef John's Beurre Blanc image

Although beurre blanc purists would object to the bit of cream in this classic sauce, it does help create a more stable base, enhances the flavor, and makes an even more beautiful color than when made without. Have all the ingredients measured and handy before starting as this sauce comes together rather quickly.

Time 18m

Yield 4

Number Of Ingredients 7

½ cup dry white wine (such as Sauvignon Blanc)
2 tablespoons lemon juice
2 tablespoons heavy cream
2 teaspoons very finely minced shallots
4 ounces cold unsalted butter, cut into 1-inch cubes
salt to taste
1 pinch cayenne pepper

Steps:

  • Place wine, lemon juice, cream, shallots, and cream in a saucepan. Bring to a simmer over medium-high heat. Reduce heat to medium, and let simmer until liquid is reduced by about 75%, 4 to 5 minutes. Reduce heat to the lowest setting and whisk in about 2 cubes of butter. Keep butter moving until it melts. When melted, add a few more cubes, whisking continuously so butter emulsifies into the wine/lemon juice mixture.
  • Continue to add butter, a few cubes at a time until all of it has been incorporated and the sauce has a thick, luxurious texture, 4 to 6 minutes. Remove from heat. Taste for seasonings and add a pinch of salt and cayenne, if desired. Serve immediately.

Time 45m

Yield about 1 cup

Number Of Ingredients 6

2 tablespoons unsalted butter, plus 2 sticks, cut into small cubes and very cold
1 shallot, sliced
1 1/2 cups dry white wine
1/2 cup seasoned rice vinegar
2 teaspoons whole peppercorns
1 tablespoon soy sauce

Steps:

  • In a medium saucepan, melt 2 tablespoons butter over medium-low heat. Add the shallots and cook until softened, 3 to 4 minutes. Add the wine, vinegar, peppercorns, and soy sauce, bring to a simmer, and cook until the liquid is syrupy and reduced to about 1/4 cup, 20 to 25 minutes.
  • Strain the liquid through a fine mesh strainer, discard the shallots and return the liquid to the pan. Return to medium-low heat and bring to a low simmer, allowing the liquid to reduce a bit more. While whisking constantly, slowly add about 3/4 of the cold butter cubes, a couple at a time, until emulsified. Turn off the heat and continue whisking while slowly adding the remaining butter cubes; whisk very well until thick and creamy.
  • Use immediately or store in a warmed thermos bottle or covered in a glass bowl set over warm water until ready to serve. Refrigerate leftovers.

Yield Serves 2

Number Of Ingredients 7

12 large shrimp, shelled, reserving the shells, and deveined
1/2 cup dry vermouth
1/4 cup fresh orange juice
1 teaspoon freshly grated orange zest
3 tablespoons cold unsalted butter, cut into 6 pieces
1 teaspoon minced fresh chives for garnish
lemon juice to taste

Steps:

  • In a small saucepan combine the reserved shrimp shells, the vermouth, the orange juice, and the zest and simmer the mixture, covered, for 5 minutes. Strain the mixture through a fine sieve into another small saucepan, discarding the shells. In a non-stick skillet melt 1 piece of the butter, over moderately high heat, in it sauté the shrimp, stirring, for 2 minutes, or until they are cooked through, and keep them warm, covered.
  • Bring the orange mixture to a boil, reduce the heat to moderately low, and whisk in the remaining 5 pieces butter, 1 piece at a time, lifting the skillet from the heat occasionally to cool the mixture and adding each new piece of butter before the previous one has melted completely. (The sauce should not get hot enough to liquefy. It should be the consistency of hollandaise.) Stir in the chives, the lemon juice, and salt and pepper to taste, divide the shrimp between 2 plates, and spoon some of the sauce over each serving.

Yield Makes 6 first-course or 4 main-course servings

Number Of Ingredients 10

3/4 cup water
6 tablespoons white wine vinegar
1/4 cup finely chopped shallots
2 tablespoons whipping cream
10 tablespoons (1 1/4 sticks) chilled unsalted butter, cut into tablespoon-size pieces
Pinch of ground white pepper
1 1/4 pounds sea scallops
1/4 cup all purpose flour
2 tablespoons olive oil
4 teaspoons chopped fresh chives

Steps:

  • Boil first 3 ingredients in heavy medium saucepan over medium-high heat until mixture is reduced to 1/4 cup, about 10 minutes. Add cream; reduce heat to low. Add butter, 1 piece at a time, whisking until just melted before adding more. Strain sauce, pressing on solids to extract as much liquid as possible. Return sauce to pan. Season with salt and white pepper. Place pan in skillet of warm water.
  • Sprinkle scallops with salt and white pepper, then dredge in flour, shaking off excess. Heat oil in large nonstick skillet over medium-high heat. Add scallops; cook until golden brown and just opaque in center, about 1 1/2 minutes per side. Divide scallops among plates. Top with sauce and chives.

Tips:

  • Use high-quality oranges. The fresher the oranges, the better the flavor of the sauce will be.
  • Zest the oranges before juicing them. This will help to release the orange's oils and give the sauce a more intense flavor.
  • Use a heavy-bottomed saucepan to make the sauce. This will help to prevent the sauce from burning.
  • Cook the sauce over medium heat. This will help to ensure that the sauce thickens properly.
  • Stir the sauce constantly while it is cooking. This will help to prevent the sauce from curdling.
  • Season the sauce to taste with salt and white pepper.
  • Serve the sauce immediately over your favorite fish or seafood dish.

Conclusion:

Spicy Orange Beurre Blanc is a delicious and versatile sauce that can be used to enhance the flavor of a variety of dishes. It is easy to make and can be prepared in just a few minutes. The next time you are looking for a quick and easy way to add a burst of flavor to your meal, try Spicy Orange Beurre Blanc. You won't be disappointed!
