This is a recipe that I've tweeked and adjusted to yield a warm noodle side-dish. It can also stand alone as a main dish. It's quick and easy and full of flavor! I serve it with Chicken Satay. Leftovers are yummy hot or cold.

12 ounces linguine
4 tablespoons sesame oil
1/2 cup green onion, chopped
1 cup finely shredded carrot
2 cups frozen stir fry vegetables
3 tablespoons minced fresh garlic
1/2 tablespoon ground ginger or 1 tablespoon fresh ginger, minced
1/4 cup honey
1/4 cup creamy peanut butter
1/4 cup soy sauce
3 tablespoons rice vinegar
1/2 tablespoon chili-garlic sauce

Steps:

  • Cook pasta in a large pot of salted water according to package directions.
  • Drain and return to pot.
  • Add 2 TBSP sesame oil and toss to coat.
  • Set aside.
  • Heat remaining 2 TBSP sesame oil in heavy pot over medium-high heat.
  • Add green onions, carrots, stir-fry veggies, garlic and ginger.
  • Saute until vegetables soften, about 4 minutes.
  • Add honey, peanut butter, soy sauce, vinegar and chili-garlic sauce and mix well.
  • Simmer sauce 2 minutes.
  • Pour sauce over pasta and toss well.
  • Transfer to platter and serve warm.

2 teaspoons sesame oil
1/4 cup light soy sauce
2 teaspoons grated fresh ginger
2 cloves garlic, minced
4 Thai chiles, halved lengthwise, and seeds removed
4 chicken breasts, cut into bite-size cubes
1/2 cup creamy peanut butter
1 tablespoon grated fresh ginger
2 cloves garlic, minced
3 tablespoons sugar
1/4 cup rice vinegar
3 tablespoons soy sauce
2 tablespoons sesame oil
1 teaspoon chile oil
2 tablespoons grapeseed oil
1 orange, rind removed, flesh segmented
2 Thai chiles diced, seeds removed

Steps:

  • Bring a large pot of salted water to a boil. Cook the noodles according to the package directions for al dente. Drain the noodles, then transfer to a large bowl and toss with the sesame oil. Set the noodles aside.

1 lb pork tenderloin
salt and pepper
1 tablespoon vegetable oil
1 cup green onion, thinly sliced

1 tablespoon soy sauce

1 (14 ounce) package of linguine style rice noodles
1 1/2 cups peanut butter (chunky is good!)
2 tablespoons Thai sweet chili sauce (1 tablespoon if you don't enjoy a little kick!)
1 tablespoon soy sauce
1 tablespoon brown sugar, level
2 tablespoons yellow curry paste (red works too!)
2 (10 ounce) cans coconut milk (shake well before opening)
1/2 cup chopped peanuts
1 green bell pepper
1 red bell pepper
1/2 cup broccoli floret
1/2 cup asian style pea pods
8 ounces chicken breasts or 8 ounces firm tofu

Steps:

  • Begin by poaching the chicken breast. (If you are using tofu, bake, fry, or steam your tofu. That is up to you!).
  • Wrap chicken in a tin-foil wrapper and place in a baking dish. Bake at 425 for about 30 minutes or until cooked completely through. While the chicken is baking, begin the sauce.
  • Pour the coconut milk into a large skillet with high sides and gently warm on medium heat for a couple minutes. Add the peanut butter and melt. As the peanut butter melts, add in the rest of the sauce (save 1/2 cup chopped peanuts) ingredients and stir fully. Let gently simmer on low heat for about 10 minutes.
  • Start a large pot of water to boil for the noodles.
  • Rinse and slice the peppers into thin strips.
  • Rinse the rest of the veggies and add all of the veggies to the sauce.
  • Cover and let continue to simmer on lowest heat.
  • When the chicken is finished cooking, remove it from the oven and the foil & let it rest for a few minutes or until cool enough to slice. Slice the chicken into slices or chunks and add to the sauce and toss.
  • Rice noodles cook fairly quickly, so keep your eye on them. Add rice noodles to boiling water and let cook according to the package directions (about 6-8 minutes). Test by eating one of the noodles for doneness. Noodle should be al dente -- cooked but not overcooked.
  • Drain noodles.
  • Turn off heat.
  • Add a small amount of the coconut peanut butter sauce to the large pasta pot.
  • Return the noodles to the pot.
  • Pour the rest of the sauce with veggies on top of the noodles.
  • Toss thoroughly.
  • Serve with a garnish of chopped peanuts on top.

This is a recipe that my sister clipped out of a magazine almost 20 years ago. Despite that, it's surprisingly spicy and VERY tasty. You may want to add less chili oil if yours is very spicy, or more peanut butter if you'd like a thicker sauce.

2 tablespoons crunchy peanut butter
2 tablespoons soy sauce
4 tablespoons vinegar
1 tablespoon chili oil
2 tablespoons sesame oil
1 tablespoon finely minced fresh ginger
1 tablespoon fresh garlic
2 tablespoons chopped scallions
chopped cilantro, to garnish

Steps:

  • Combine all ingredients except scallions in a bowl, using the back of a large spoon to blend into a smooth paste.
  • Use sauce to dress noodles, vegetables and/or meat.
  • Sprinkle scallions over top.
  • This recipe makes 1 cup of sauce, enough to dress 1/2 lb.
  • of noodles.
  • Use 1-2 T per 1/2 c vegetables.
  • I usually use this sauce over 1 lb sliced grilled chicken breast, steamed carrots, snowpeas, red bell pepper and fresh bean sprouts.

This is a great dish to serve at a casual lunch or dinner party. Just set out all the ingredients, and let people make their own lettuce bundles. Store-bought roasted duck or chicken can be used.

2 boneless whole duck or chicken breasts
1/2 cup soy sauce, plus 3 tablespoons for peanut sauce
1 large clove garlic
1 piece (3/4 inches) ginger, peeled and cut in half
2 1/4 teaspoons ground fresh chile paste
7 tablespoons smooth, good-quality peanut butter
3 tablespoons sugar
4 1/2 tablespoons peanut oil
Juice of 1 lime
6 ounces vermicelli noodles, or capellini (angel hair) noodles
1/2 cup roughly chopped, toasted Spanish or other peanuts
2 ounces garlic chives or scallions, cut into 4-inch lengths
1 Japanese or Kirby cucumber, thinly sliced
2 Boston or other butterhead lettuce, leaves separated

Steps:

  • Place duck or chicken breasts in a resealable plastic bag along with 1/2 cup soy sauce, and let marinate for 1 hour. Heat a lightly oiled grill or cast-iron skillet over medium-high heat until very hot. Grill duck or chicken breasts until cooked through, about 5 to 7 minutes per side for duck and 4 to 6 minutes per side for chicken. Let cool slightly, and shred with your fingers, or cut into 1/2-inch-wide strips with a knife.
  • In a food processor, pulse garlic and ginger until finely chopped. Add chile paste, peanut butter, 3 tablespoons soy sauce, sugar, peanut oil, lime juice, and 4 1/2 tablespoons water, and pulse until smooth. If a thinner sauce is desired, add 1 or 2 more teaspoons water, and pulse to combine. Set aside.
  • Bring a large pot of salted water to a boil. Add noodles, and cook until al dente, about 8 minutes. Drain in a colander, and rinse with cold water to stop the cooking.
  • Dress the noodles with 1/2 cup of the peanut sauce, and transfer to a medium serving bowl. If desired, set the bowl into a larger bowl filled with ice to keep the noodles chilled at the table. Arrange peanuts, remaining sauce, and prepared fillings in various serving dishes on the table. Guests can create their own rolls by wrapping noodles, a little sauce, and their choice of meat and fillings in a lettuce leaf.

1/4 to 1/3 c water
2 T soy sauce
1.5 T rice vinegar
2 t chile paste with garlic
1/2 t sugar
1/4 t salt
1 lb medium shrimp
1/4 t salt
8 oz uncooked thick udon noodles or linguine
1 red bell pepper, cut into strips
3/4 c chopped, seeded cucumber
1/4 c diagonally cut green onions
3 T chopped roasted peanuts (optional)
2 T cilantro leaves

Steps:

  • 1. To prepare the sauce, whisk together 1st 7 ingredients 2. To prepare shrimp, seasons with 1/4 t salt. Saute in a non-stick pan coated with cooking spray on medium heat for 3 minutes on each side until cooked through. 3. To prepare pasta, cook noodles according to package, omitting any fat and salt 4. Combine peanut sauce, shrimp, noodles, veggies and toss well. Add cilantro and peanuts, if desired.

SWEET AND SPICY PEANUT NOODLES (FOR TWO)

Feel free to add to this versatile noodle dish to make a meal. Sugar snap peas are delicious here! Add rotisserie chicken and vegetables if desired. It does taste best at room temperature. And you can adjust the amount of heat by using less or more sambal.

1 tsp toasted sesame oil
2 clove garlic, minced
1 tsp ginger paste, (or fresh grated ginger)
1/4 c creamy peanut butter
2 Tbsp soy sauce
1 Tbsp hoisin sauce
1 Tbsp brown sugar
1 Tbsp rice vinegar
2 tsp sambal oelek (asian chile paste), to taste
1/4 c canned coconut milk (or to desired consistency)
6 oz linguine
1/3 c chopped green onions
1/3 c crushed peanuts

Steps:

  • 1. While linguine is cooking, in a small saucepan over medium heat, add sesame oil, garlic and ginger and cook, stirring, for 1 minute.
  • 2. Add peanut butter, soy sauce, hoisin, brown sugar, vinegar, sambal and coconut milk. Cook and stir until sauce is well combined and thickened, about 4 minutes.
  • 3. Add more coconut milk to make to your desired consistency and adjust seasonings, then add some of the green onions and pasta and toss.
  • 4. Allow to come to room temperature, then sprinkle with remaining green onions and crushed peanuts and serve.

12 ounces linguine
4 tablespoons sesame oil
Sauce
1/2 cup green onion, chopped
1 cup finely shredded carrot
2 cups frozen stir fry vegetables
3 tablespoons minced fresh garlic
1/2 tablespoon ground ginger or 1 tablespoon fresh ginger, minced
1/4 cup agave
1/4 cup creamy peanut butter
1/4 cup soy sauce
3 tablespoons rice vinegar
1/2 tablespoon chili-garlic sauce

Steps:

  • Cook pasta in a large pot of salted water according to package directions. Drain and return to pot. Add 2 TBSP sesame oil and toss to coat. Set aside. Heat remaining 2 TBSP sesame oil in heavy pot over medium-high heat. Add green onions, carrots, stir-fry veggies, garlic and ginger. Saute until vegetables soften, about 4 minutes. Add agave, peanut butter, soy sauce, vinegar and chili-garlic sauce and mix well. Simmer sauce 2 minutes. Pour sauce over pasta and toss well. Transfer to platter and serve warm. Garnish with additional green onions, if desired.

1 pound spaghetti
3/4 cup smooth peanut butter
1/2 cup unseasoned rice vinegar
3 tablespoons plus 1 teaspoon sugar
6 tablespoons soy sauce
1/4 cup water
1 tablespoon toasted sesame oil
2 teaspoons crushed red pepper
One 2-inch piece of fresh ginger, peeled and coarsely chopped
1 large garlic clove
3 celery ribs, thinly sliced
1/2 cup coarsely chopped cilantro leaves and tender stems
Lime wedges, for serving

Steps:

  • In a pot of boiling salted water, cook the spaghetti until tender. Drain and rinse under cold water until cooled. Drain well. In a blender, puree the peanut butter with 6 tablespoons of the vinegar, 3 tablespoons of the sugar, the soy sauce, water, sesame oil, crushed red pepper, ginger and garlic. Transfer 1/2 cup of the peanut dressing to a bowl and toss with the noodles. In another bowl, toss the celery with the cilantro and the remaining 2 tablespoons of vinegar and 1 teaspoon of sugar. Transfer the noodles to bowls and drizzle with the remaining peanut dressing. Top with the celery and serve with lime wedges.
