1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon chili powder
2 teaspoons olive oil
1/2 lb medium shrimp, peeled and deveined (about 20 shrimp)
1 avocado, pitted and diced
1/2 cup mayonnaise
1 chipotle pepper
1 lime, juice of
1/4 teaspoon kosher salt
2 French rolls
4 romaine lettuce leaves

Steps:

  • Combine cumin, garlic powder, 1/4 teaspoon kosher salt, chili powder and olive oil together in a bowl. Place shrimp in the bowl and toss to coat.
  • Combine avocado, mayonnaise, chipotle pepper, lime juice and 1/4 teaspoon kosher salt in a food processor. Pulse until smooth. If you like it chunkier, mash with fork until desired consistency.
  • Place shrimp in a skillet over medium heat. Cook until pink and cooked through, about 5 minutes.

2 tablespoons olive oil
1 pound (16-20 count) large shrimp, shelled and deveined
1 teaspoon kosher salt
1 teaspoon coarsely ground black pepper
1 shallot, minced
1 stalk celery, minced
1 jalapeno, minced
1/2 lemon, juiced
1 tablespoon chopped parsley leaves
1 tablespoon chopped chives
Pinch cayenne
1/2 cup mayonnaise
Sweet Onion Jam, recipe follows
when ready to serve.
2 red onions, thinly sliced
1/2 cup red wine vinegar
1/2 cup dry red wine
1/2 cup sugar
