1 (14 ounce) can light coconut milk
¼ cup peanut butter
2 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon lime juice
1 teaspoon sriracha sauce
½ teaspoon ground chile pepper
1 tablespoon olive oil
2 carrots, diced
1 red bell pepper, diced
1 (14 ounce) package firm tofu, drained and cut into 1-inch cubes
4 garlic cloves, minced
2 tablespoons minced fresh ginger
4 cups baby spinach
1 ½ cups cooked brown rice

Steps:

  • Whisk coconut milk, peanut butter, soy sauce, brown sugar, lime juice, sriracha sauce, and ground chile powder in a bowl until a smooth sauce forms.
  • Heat oil in a large skillet over medium-high heat. Add carrots and red bell pepper; saute until just tender, 1 to 2 minutes. Add tofu; saute until lightly browned, about 4 minutes per side. Add garlic and ginger; cook and stir until fragrant, about 30 seconds.
  • Pour sauce into the skillet; stir to coat tofu, carrots, and bell pepper. Cook until flavors combine, about 5 minutes. Reduce heat to low; stir in spinach 1 cup at a time until wilted. Serve over brown rice.

1 (14 ounce) package extra firm tofu, drained and cut into 1-inch cubes
2 teaspoons canola oil
3/4 lb snow peas, trimmed
1 cup red bell pepper, sliced into strips
3/4 cup water, divided
1/2 cup green onion, sliced
2 teaspoons fresh ginger, peeled and minced
2 garlic cloves, minced
3 cups shiitake mushrooms, sliced (about 8 ounces)
2 tablespoons reduced sodium soy sauce or 2 tablespoons soy sauce
2 tablespoons creamy peanut butter
1 teaspoon cornstarch
2 teaspoons sriracha sauce
1/4 teaspoon salt

Steps:

  • Place tofu cubes on several layers of paper towels. Cover with additional paper towels; let stand 5 minutes.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add tofu to pan; cook 7 minutes or until lightly browned, gently turning occasionally.

1/2 cup smooth peanut butter
1/4 cup low-sodium soy sauce
1/4 cup apple cider vinegar
1 tablespoon honey
1 tablespoon hot sauce
1 tablespoon sesame oil
1 knob ginger, grated (to equal about 1 tablespoon)
5 large cloves garlic, grated
1 pound boneless, skinless chicken breasts, cut into 1/4-inch-thick strips
Kosher salt
1/4 teaspoon red pepper flakes
3 tablespoons canola oil
12 to 15 small red radishes, quartered, plus 1 loose cup radish greens, coarsely chopped
1 large red bell pepper, cored, seeded and cut into 1/2-inch-thick strips
1 cup frozen peas
Zest and juice from 1 small lime

Steps:

  • In a large bowl, whisk the peanut butter with the soy sauce, vinegar, honey, hot sauce, sesame oil, ginger, two-thirds of the garlic and 2 tablespoons warm water until smooth. (If the sauce is too thick, thin with a little more warm water.) Set aside.
  • Arrange the pieces of chicken on a baking sheet in a single layer. Sprinkle on one side with salt and the red pepper flakes. Turn the pieces on their other side and sprinkle again with salt.
  • Heat a large heavy-bottomed skillet over high heat. Add half of the oil and heat until it begins to smoke. Remove the skillet from the heat and quickly add half of the chicken pieces in a single layer. Return the pan to high heat and cook, stirring from time to time, until the chicken is fully cooked, 3 to 5 minutes. Drain and repeat with the remaining oil and chicken.
  • In the same skillet, stir in the remaining garlic, radishes, radish greens and peppers and season with salt. Mix so the radish greens wilt. Stir in the peanut sauce and simmer for an additional minute. Taste for seasoning. Stir in the peas and the chicken. Turn off the heat and let rest a couple of minutes on the stove. Top with a few grates of lime zest and the juice.

1 tablespoon rice black vinegar
1 tablespoon brown sugar
2 teaspoon cornstarch
¼ teaspoon red pepper flakes
2 tablespoons vegetable oil
16 oz extra firm tofu (diced)
2 oz red onions
3 cloves garlic
2 oz shiitake mushrooms
4 oz snow peas
2 teaspoon hoisin sauce
½ teaspoon sesame oil
salt and peper to taste

Steps:

  • In a medium-sized bowl, add soy sauce, rice black vinegar, brown sugar, cornstarch, red pepper flakes, and mix until combined, set aside.
  • Heat a large pan on medium heat with oil and fry the tofu until all sides are golden, then remove, transfer to a plate lined with paper towels, and set aside.
  • Add the remaining oil into the same pan and sauté sliced red onions and crushed garlic cloves for about 1 minute.
  • Add slices of mushrooms and continue cooking for 3 minutes on medium-high heat.
  • Stir in the snow peas and cook for 2 minutes.
  • Add the fried tofu and the soy sauce mixture.
  • Cover and allow it to steam for 2 minutes on medium-low heat.
  • Add hoisin sauce and adjust the seasoning.
  • Turn off the heat and add a touch of sesame oil.

The title says it all, I think. I like the peppery-ness of the napa cabbage with the sweet peppers. Feel free to add the veggies you like (sometimes I use eggplant). Just make sure you don't cook the veggies until they're mushy. You want them to still be firm, but not raw.

1 (8 ounce) package firm tofu (or extra firm)
2 teaspoons chili-garlic sauce (more or less according to taste)
2 minced garlic cloves
1 tablespoon sesame oil
4 tablespoons soy sauce (I use low-sodium)
1 tablespoon rice vinegar
2 tablespoons rice wine
1 teaspoon fresh grated ginger
1/4 cup low sodium vegetable broth
1 tablespoon sesame oil
1 cup mushroom, sliced in half
1 large red pepper (orange or yellow are good, too(just chop it into roughly 1 by 2 inch pieces)
1/4 cup sliced green onion
2 cups shredded napa cabbage
1/4 cup chopped fresh cilantro
1 teaspoon cornstarch (mixed in 2 T cold water, cornstarch slurry)

Steps:

  • Cube tofu into approximately 1 by 2 inch pieces.
  • Set on top of paper towels and press (not too hard, you don't want to mash the tofu) on the top with more paper towels to rid the tofu of excess moisture.
  • Mix: chili garlic sauce, minced garlic, 1 T sesame oil, soy sauce, rice vinegar, rice wine, ginger, and chicken/veg stock.
  • Add tofu into chili sauce mixture. Make sure all pieces are in contact with the liquid. Let soak for 15 to 20 minutes.
  • Put frying pan over med-high heat. Once pan has heated, add 1 T sesame oil.
  • Put marinated tofu in pan, brown all sides.
  • Remove tofu and set aside.
  • Add cornstarch slurry to remaining marinade, mix. (Add a few more tablespoons of soy sauce or rice wine or vinegar if necessary--you want this to be enough to eventually coat the vegetables as a light sauce).
  • Put mushrooms and peppers into frying pan. Stir constantly over high heat for 2 minutes.
  • Add green onion and napa cabbage. Stir constantly for 1-2 minutes.
  • Pour leftover marinade over vegetables, stir. Add browned tofu and chopped cilantro. When heated through, remove from heat.
  • Serve with rice.
