3 tablespoons rum or 3 tablespoons vodka
2 tablespoons lime juice
2 teaspoons lime zest
1 inch fresh ginger, peeled and minced
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon black pepper
1 tablespoon vegetable oil
1 1/2 lbs fresh tuna steaks (can use halibut or swordfish)
lemon wedge
lime wedge

Steps:

  • Add the tequila, lime juice, lime peel, ginger, garlic, salt, sugar, cumin, cinnamon, and pepper to a small bowl; stir to combine.
  • Pour marinade into a 2-quart glass casserole dish.
  • Add the tuna; turn steaks to coat.
  • Cover and refrigerate 30 minutes.
  • Remove steaks from marinade and throw out the marinade.
  • Grill tuna over med-hot heat approximately 4 mins per side or until fish flakes easily.
  • Serve with lemon and lime wedges.
