½ cup rice vinegar (unseasonsed)
3/4 cup water
4 oz white sugar ((1/2 cup + 2 tbsp))
5 garlic cloves (chopped finely)
1 tbsp soy sauce (gluten free soy sauce or salt if you'd like to keep the recipe gluten free or soy free, OR 1/2 tbsp fish sauce)
1/2 tsp cayenne pepper (optional - halve it or leave it out if you like it less spicy)
2.8 oz sambal oelek (a generous 2 1/2 tbsp (please see recipe notes))
4 tsp cornflour / cornstarch ((see recipe notes))
2 tbsp water

Steps:

  • Add the vinegar, water, sugar, garlic cloves, soy sauce, and cayenne pepper (if using) in to a non-stick pan. If you're using dried chili instead of sambal oelek, add it to the pan at the same time.
  • Heat over medium heat while stirring, to dissolve the sugar. Increase the heat to medium-high and bring it to a boil. Let it simmer for about 2 minutes.
  • Add the sambal oelek and mix through. Let it cook for a few minutes until it's slightly thickened (2- 5 minutes)
  • Mix the cornstarch and water into a smooth slurry and add this to the sauce as well.
  • While stirring frequently (to prevent the sauce from burning at the bottom), simmer the sauce for a further 2 - 5 minutes or until it reaches a desired thickness. Remember, the sauce thickens as it cools as well. If it thickens too much, add a little extra water to thin it out. If you're using Clear Jel, the sauce will thicken mostly only as it cools down.
  • Pour into glass jars with air-tight lids (OR heated and sterilized jars to store for longer).
  • Cool to room temperature and store in the fridge.

diabetic alternative: use granular sweetener of choice (e.g. erythritol)
1 tablespoon rice wine ((can substitute dry sherry))
1 tablespoon sambal oelek ((use more or less according to taste))
OR 1-2 teaspoons dried red chili flakes ((these are very hot, start with less and add more if desired))
1 1/2 teaspoons finely minced garlic
1 teaspoon finely minced ginger
1 teaspoon tamari or soy sauce ((use tamari for gluten free))
2 teaspoons cornstarch dissolved in 1 tablespoon water ((the sauce will thicken more once cooled))
1-2 drops natural red food coloring ((optional))

Steps:

  • Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Let the sauce cool completely, pour into an airtight jar and store in the refrigerator. Will keep for up to a week. Makes about 1 cup.

20 red chillies , stems removed, deseeded for a milder sauce
1 finger sized piece of ginger , peeled and roughly chopped
5 garlic cloves , roughly chopped
100ml white wine or cider vinegar
200g white caster sugar

Steps:

  • Tip all the ingredients except the sugar into a mini chopper or blender and blend to a chunky sauce. Scrape the contents into a shallow saucepan with the sugar and 100ml water and bring to a simmer.
  • Simmer for 15 mins, stirring occasionally until it becomes syrupy. Keeping a close eye on it, continue to simmer and stir for 5 mins more until it easily coats the back of the spoon and you see the bottom of the pan when you stir. Leave to cool and infuse for 1-2 hours. Will keep in a small sterilised jar for up to a month.

1 teaspoon brown sugar, packed
1 garlic clove, crushed

1/8 teaspoon salt

Steps:

  • In a medium saucepan, combine 1 cup bottled chili sauce, 1/4 cup chopped onions, 3 T. vinegar, 1 teaspoons packed brown sugar, 1 clove crushed garlic, 1/4 teaspoons dry mustard, 1/4 teaspoons bottled hot pepper sauce, and 1/8 teaspoons salt.
  • Bring to boiling. Reduce heat. Simmer, uncovered 10 minutes, stirring often.

3/4 cup of Sugar
1/2 cup Rice Vinegar (you can substitue with white vinegar, but it's stronger)
1/4 cup of water
1 tbsp finely minced garlic
1 tbsp crushed red pepper flakes
1 tbsp or less Siracha/ Hot sauce (optional)
1 tbsp of cornstarch
1 tbsp of cold water (to dissolve the cornstarch)
1/2 tbsp fish sauce (or 1/2 tsp salt if you don't have any)

Steps:

  • Method: - Start with 3/4 cup of sugar in a small sauce pan. - Add the rice vinegar and water to the sugar and turn the heat to a medium high. Bring the sugar solution to a boil while stirring, until the all the sugar is dissolved. - Add the finely minced garlic and crushed red pepper. - For some extra heat and color you can add some siracha or hot sauce to it. I like it to have a little zip to it after the initial sweet flavor. Let the sauce simmer bubble for a few minutes until it thickens slightly and all the flavors blend in. - In the meantime, dissolve 1 tablespoon of corn startch in a tablespoon of cold water until there are no lumps in it. - Turn the heat up to a rapid bubble and pour in the cornstarch slurry in the sauce and stir it well. - You'll notice the sauce thicken faster and you can turn the heat down again. Lastly, add 1/2 tbsp of fish sauce for some saltiness or a 1/2 tsp of regular salt and stir it in. Turn off the heat and let the sauce cool down. - Serve as a dipping sauce, or toss a couple tablespoons in a stir fry for sweet and spicy dish! Bottled or in an air-tight container this sauce lasts a long time in the fridge. 6 tablespoons distilled white vinegar, preferably a Thai brand
1 cup sugar
1 teaspoon kosher salt
7 red Thai chiles, fresh or freshly frozen, or canned pickled Thai red chiles
8 cloves garlic, smashed and peeled

Steps:

  • To a small saucepan, add water, vinegar, and sugar; bring to a simmer over medium-high heat. Meanwhile, roughly slice chiles and garlic. Place in a food processor with salt and pulse to a rough chop; add to the pot. Turn heat to low to maintain a steady simmer and cook, uncovered, until the liquid thickens slightly and becomes just slightly syrupy, 8-12 minutes. Cool to room temperature.
