Number Of Ingredients 25

1 medium yellow onion, fine dice
1 green bell pepper, diced
1 red bell pepper, diced
1 jalapeno pepper, fine dice (optional)
2 Tablespoons minced garlic
1 teaspoon tomato paste
1 lb. collard greens, chopped into 1 ½ inch pieces *
2 Tablespoons reduced-sodium tamari *
1 ¼ cups low-sodium vegetable broth *
½ cup water
1 Tablespoon pure maple syrup
½ teaspoon distilled white vinegar
1 teaspoon garlic powder
1 teaspoon onion powder
2 Tablespoons dried minced onions
pinch to ½ teaspoon sea salt (+/-) *
1/8 teaspoon black pepper (+/-)
Pinch to ¼ teaspoon crushed red pepper (optional)
1 to 2 teaspoons cornstarch (or arrowroot powder) *
1 Tablespoon water
Splash apple cider vinegar
Splash hot sauce
Chopped fresh parsley
Steamed Rice
Baked Potato

Steps:

  • Rinse the collard greens well, then place a collard green leaf on a flat surface, remove the center vein (discard center vein), set aside. Once all the center veins have been removed, lay the collards on top of each other and cut into squares. Set aside.
  • Place the Sauce Ingredients in a small bowl, whisk well to combine, set aside.
  • In a large ceramic/enamel-lined pot or similar stock pot, add the diced onions, jalapeno pepper, red and green bell peppers. Sauté over medium-high heat until the veggies begin to soften, approximately 7 to 9 minutes, stirring periodically to prevent burning. Add a tablespoon or so of water if they start to stick and/or to prevent burning.
  • Add the minced garlic and tomato paste, sauté for 1 minute, stirring constantly, then add the collards and the Sauce Mixture. Bring the mixture to a boil, then lower to a low-boiling simmer, stir to combine. Cover with a tight-fitting lid. Simmer for 15 to 20 minutes or until the collards have reached the desired tenderness, stirring occasionally.
  • Sprinkle in the red pepper flakes, stir to combine. Allow to simmer for one minute.
  • Make the Slurry by combining the cornstarch (or arrowroot powder) with the water. Whisk to remove any lumps, then increase the heat and pour the slurry into the skillet with the collards. Heat until slightly thickened. Simmer for several minutes.
  • Remove from the stove and rest for 5 minutes to allow the flavors to marry.
  • Serve over steam rice or baked potato.

SPICY STEWED COLLARDS

Spicy Stewed Collards image

Collards are a hearty green with a slightly bitter edge so they pair well with a little heat and warm spices like cardamom and cumin. If you can't find a Fresno pepper, use a small jalapeño or a few pinches of crushed red pepper flakes instead.

SWEET AND TANGY COLLARD GREENS

Sweet and Tangy Collard Greens image

On New Year's Day, Julia Sullivan, chef at Henrietta Red in Nashville, TN, makes black-eyed peas and these collard greens. "It's something my mom has always done, and I think my grandparents, too. It's a superstitious thing. The black-eyed peas bring good luck, and the greens symbolize money." Finishing these collard greens with vinegar means they tend to be on the acidic side. If you like yours sweeter, add less vinegar and up the sugar.

Yield 8 servings

Number Of Ingredients 10

3 tablespoons extra-virgin olive oil
4 ounces slab bacon, finely chopped (optional)
1 medium onion, finely chopped
4 garlic cloves, finely chopped
1 teaspoon crushed red pepper flakes
3 pounds collard greens (about 3 bunches), ribs and stems removed, leaves sliced crosswise into 1-inch-thick strips
3 cups low-sodium chicken broth or water
1/4 cup apple cider vinegar
2 teaspoons sugar
Kosher salt, freshly ground pepper

Steps:

  • Heat oil in a large heavy pot over medium. Add bacon, if using, and cook, stirring occasionally, until some of the fat begins to collect in the pot and bacon starts to look shiny, about 5 minutes. Add onion and cook, stirring occasionally, until golden and softened, 5-7 minutes. Add garlic and red pepper flakes and cook, stirring, until fragrant, about 30 seconds.
  • Working in batches, add collard greens to pot, letting greens wilt slightly after each handful before adding more. Add broth, bring to a simmer, and cook, stirring often, until greens wilt and lose about half of their original volume, about 4 minutes. Reduce heat to medium-low, partially cover pot, and simmer gently, stirring occasionally, until greens are tender and liquid is almost completely evaporated, 25-30 minutes. Stir in vinegar and sugar and cook another minute to allow sugar to dissolve; season with salt and pepper.

TANGY 'N' SPICY VEGETARIAN COLLARD GREENS

Tangy 'n' Spicy Vegetarian Collard Greens image

These greens definitely have a kick. They're a perfect mixture of spice, veggies, herbs, and smoke, without the meat. They've got an edgy spice to them that authentic Caribbean and Mexican-cuisine lovers will enjoy. Even better, they're good for you - without the meat, without the fat, and without all the salt. For this recipe, use a regular eating spoon as your "teaspoon," and make all of your tablespoons slightly heaping (and slightly overflowing, for your tablespooned liquids). Enjoy!

Time 1h40m

Yield 4-5 serving(s)

Number Of Ingredients 20

3 bunches cleaned and cut collard greens
7 cups water
1 teaspoon brown sugar
3 tablespoons olive oil
2 garlic cloves, finely minced
1 large white onion, finely chopped
1 red bell pepper, thin 2 inch long strips
1 yellow bell pepper, thin 2 inch long strips
2 tablespoons liquid smoke
1/2 cup balsamic vinegar
1/2 cup apple cider vinegar
1 tablespoon dried bay leaf, chopped
1 tablespoon dried thyme

  • Meanwhile, in a large skillet, heat 2 tablespoons of olive oil and sautee garlic, onion, and both peppers until tender. Add contents of skillet to the water and reduce heat to medium.
  • As water continues to boil gently, add liquid smoke, vinegars, bay leaves, thyme, celery salt, black pepper, cheesecloth-bagged coriander, onion powder, red pepper, and Worcestershire sauce to pot.
  • Add all greens to pot, stirring gently to submerge greens into broth.
  • Cook on medium heat for 45 minutes.
  • Then reduce heat to low and simmer for another 20 minutes.
  • Taste the "pot liquor" and add the extra cup of water if desired to reduce the "kick", making your greens more mild and less spicy.

Tips:

  • Choose fresh collard greens: Look for collard greens with deep green leaves and no signs of wilting or yellowing.
  • Wash the collard greens thoroughly: Collard greens can be gritty, so it's important to wash them thoroughly before cooking.
  • Remove the tough stems: The tough stems of collard greens can be difficult to chew, so it's best to remove them before cooking.
  • Chop the collard greens into bite-sized pieces: This will help them cook evenly.
  • Cook the collard greens until they are tender: Collard greens can take some time to cook, so be patient. They're done when they are tender but still have a bit of a bite to them.
  • Season the collard greens to taste: Collard greens can be seasoned with a variety of spices, such as salt, pepper, garlic powder, and onion powder.
  • Serve the collard greens hot: Collard greens are best served hot, as a side dish or main course.

Conclusion:

Spicy sweet collard greens are a delicious and nutritious dish that can be enjoyed by people of all ages. They are a good source of vitamins, minerals, and fiber. Collard greens are also a low-calorie food, making them a good choice for people who are watching their weight. If you're looking for a healthy and flavorful side dish, spicy sweet collard greens are a great option.
