SPICY TACO MEAT
My husband and I love Tex-Mex food with all the fixings. Cooking the meat in the slow cooker makes prepping the toppings a breeze. We love to serve this at parties, with the filling in the slow cooker to stay warm and the various toppings in bowls so the guests can build their own! -Rebecca Yankovich, Springfield, Virginia

DELICIOUS AND SPICY 'WHO NEEDS MEAT' VEGETARIAN TACO CASSEROLE
One day, I was craving for mexican food but I had a vegetarian friend over for dinner, so I decided to experiment with a vegetarian take on my favorite taco casserole dish, which turned out, to my surprise, even better than the original! Instead of using tortilla chips, you can also just scoop some of the casserole in a soft taco, this is actually really good as well, especially when served with some guacemole!

Steps:
- Place beef, turkey and onion in a large nonstick skillet over medium heat. Cook, breaking up the meat with a wooden spoon, until cooked through, about 10 minutes. Transfer to a colander to drain off fat. Wipe out the pan. Return the meat to the pan and add tomatoes, cumin, ground chipotle (or chili powder) and oregano. Cook over medium heat, stirring occasionally, until most of the liquid has evaporated, 3 to 6 minutes.
Tips:
- Choose the right ground beef: Opt for 80/20 ground beef for a juicy taco filling.
- Use a variety of spices: Don't be afraid to experiment with different spices to create a unique flavor profile for your taco meat. Some popular options include chili powder, cumin, paprika, oregano, and garlic powder.
- Don't overcook the meat: Overcooked ground beef is dry and tough. Cook it just until it is no longer pink in the center.
- Drain the grease: Before adding the spices, drain off any excess grease from the ground beef. This will help to reduce the fat content of the taco meat.
- Simmer the meat in sauce: Once the spices are added, simmer the ground beef in a flavorful sauce for at least 15 minutes. This will help to develop the flavors and make the meat extra tender.
- Use fresh ingredients: Whenever possible, use fresh ingredients for the best flavor. This includes fresh onions, tomatoes, and cilantro.
Conclusion:
With these tips in mind, you can easily make delicious and flavorful spicy taco meat at home. Whether you are using it for tacos, burritos, or simply as a filling for your favorite Mexican dishes, this versatile recipe is sure to please everyone at your table. So, get creative and experiment with different spices and ingredients to find the perfect combination for your taste buds. Happy cooking!
